Curries, I cant get enough of them

When I first went on estrogen and Spiro I started craving pickels. That lasted for over a year. I would eat three quarts a week of the crunchy baby pickles. Now I have a new craving, curry. Yellow, red, green, spicey or not I love them all. I can't seem to get enough of them. I am no cook, but I have to learn how to cook with curry.

  I hear you!  I always liked spicy food.  But I have GERD that flares up when I go on those spicy binges.  My doc had me to take Prilosec OTC for that.  So far, so good.

I've always loved spicy food but after 2 yrs of HRT I found myself a total FIEND for it. I had to have it every day or life just wasn't the same anymore...and the pickles, soy sauce, fish sauce....oh the joys! I was starting to get scared I was going to give myself an ulcer or a heart attack. But after surgery and dropping spiro...I still love it, but don't need it like my life depended on it which is a relief. Anyways, my fav cookbook for awhile has been Curry Cuisine which is a compilation of curry dishes from around the world and most Indian cookbooks are pretty decent and should set you on the path. Thai curry is uber easy if in a hurry...just buy the cat-food-looking can of red, green, panang etc...and add coconut milk and protein/veggies of choice. If you want to really do it right though, you'll want a dedicated coffee grinder for spices only, and a food processor....unless you're mad, in which case you'll need a lot of free time and two stones: a fist sized one and a large flat one ;)

If you are in a hurry, just do what most Indians cooking at home do and open a jar of Patak's curry mix!

when i cook curry i try to add a pinch of pepper or chili to give it that extra ompf. but just adding curty powder makes it taste bad. a curry i make i use thickened cream as the sauce. cook curry first brown the chicken or cook the rice. then add the extra ingredients. but if you want a little zest add a pinch of pepper to the chicken while browning. also i hear that paprika and tumeric are great to add. and cant go cajun pepper. :)
