Ah yes, bread! Well I have reactions to most breads nowadays, gives me the bloat and is just not something I can handle much of anymore. I think that the flour we use is causing a gluten reaction and drives me crazy. If I am in Europe, South America or in parts of Asia, the bread over there does not effect me in the same way. Even the pasta in Italy is really good, here the gluten/pasta gets me bloated as well. However in the last year what I found that really makes a difference is a good homemade sourdough. I can a piece of 2 with no side effects, I still prefer to only a small amount. It appears after trying to find out why, it has to do with the long fermenting process that makes the difference. If anyone has gluten issues and like to make bread, sourdough maybe an option.
