   What to do with leftover steak? Why make a breakfast burrito of course.

 I sliced some of the steak, added sliced onion, bell peppers and jalapenos in a fry pan and cooked a bit. Meanwhile I scrambled an egg which I then added to the steak/pepper mix and toasted a flour tortilla on the stove top. Put mthe filling on the tortilla, add cheese fold and eat.

Your breakfasts all look soooo good! Mine is always the exact same thing ... brown bread with a little olive oil, black coffee, and a cup of hot water. Occasionally I'll poach an egg, but that's rare.

It was meant for you! It makes me want to break out of my box and make new things. The problem is I am not a morning person. So I just make something quick and easy and run out the door.

   Well, it is time for breakfast once again.

   This morning I decided on ham and eggs served with maple sausage gravy and a slice of oat & bran toast.

  Simple but it tastes good.

So I've been thinking really
hard about all this healthy
eating habits and good start
to the day stuff a lot.
I mean, I'm a bit older now
and it would be nice if I took
better care of myself like
all of you do. So I decided to
start with breakfast food
that I like. Bacon. A pound
of thick cut bacon, cooked
completely crisp



You can't have just bacon,
of course. That wouldn't be
a healthy decision, and after all,
the point of all of us sharing
our dishes and encouraging
one another to do better with
our eating habits is to enjoy
the benefits of a healthier life.
So I made a sauce.



In a saucepan I mixed:

2 cups  sugar
1 cup light corn syrup
1 cup water
1 teaspoon vanilla extract

Bring it it to 250° F then
put the bacon  (remember the bacon?)
into the boiling sugar. From
here on it's constant stirring
over medium heat until it's 290° F.
Then in goes 3 tablespoons of
butter followed by 3 teaspoons
of baking soda. Stir vigorously
until frothing, then pour on a
sheet pan and pull towards
edges quickly. Allow to cool.



Smash and  enjoy.



Devlyn's nearly world famous
bacon brittle. Recipe yields
about a pound and a half.
You might want to add salt
if you're on Spiro.
Or from the South.  :laugh: >:-)

 OMG Devlyn, That looks and sounds so delicious. I'm not so sure about it's healthy properties though. It could just raise my blood sugar level a but higher than even I would like to see it. (my doc already would have issues with some of the stuff I make) But is sure looks good. And it does not sound difficult to make either. I'd be tempted to swap maple extract in for the vanilla thought to get it even more of a maple flavor. Maple and sugar go well with each other.

  Morning folks,

  This morning My BS was a little high so I have kept the carbs lower. Now if only I knew something about portion size.... I made: Cheesy scrambled eggs and a fried mix of steak, chorizo, onions, bell pepper and jalapenos. Spicy!

 In the week I have porridge and a banana so Sunday treat is a fry up UK style bacon, sausage, tomato, mushrooms and an egg with a slice of fried bread (whole meal have to keep it healthy!!!!) and a splash of brown sauce. Off to cook tea now

  You got me on a couple items, can you elaborate for someone across the pond?

  Porridge - I think that would be like a bowl of oatmeal?

  U.K. style bacon - I haven't heard that one before.

  Fried bread - sounds obvious but I can be wrong.

bacon, thin slice cured fried crispy mmmmmm fried bread , a slice in the frying pan to mop up the fat , cooked until browned mmmmmmmmmmmm , brown sauce its a spicy sauce good with meats . Its a UK thing.

To me it tastes similar to like, A1 or a thicker Worcestershire. It's really good!

God I miss eating potatoes!!! I get too worried taking Spiro and eating high potassium foods so I just avoid them

 Hi Kadence,

   I worry more about the carbs than potassium as I am diabetic. I too take spironolactone. I will use a medium potato for 2 or three breakfasts. I will usually have about half a potato for supper. I don't really worry about the potassium.
  If you do, then I would suggest asking your doctor about your concerns and get their thoughts on the subject.

I know I keep telling myself not to get so worked up about it, but my hypochondriac self comes out!! Lol. I've never heard of another healthy trans woman having problems with potassium
