@sarahc
Dear Sarah:
Sounds really good.
I love Bow-Tie pasta, but only ONE meatball ? ???
I hope it was a big one !!!!
What kinds of things did you put in your sauce??  Mushrooms?  Green Peppers?  Onions?  Garlic?
HUGS,
DANIELLE

@Northern Star Girl

I made a batch of large meatballs that I browned and then braised in the sauce. The meatballs were pretty large, and I actually had one and a half meatballs. The sauce was pretty basic: a large can of San Marzano tomatoes that I smashed, a little sauteed onion and garlic, tomato paste, teaspoon of sugar, seasonings. I forgot to throw in grated carrot...carrots do a wonderful job balancing out the acidity, and the sauce needed that. But it was still pretty good.

Meatball salad. Meatball bits, romaine, tomato, onion, pepperoncinis, parm, coutons and a splash of Caesar dressing. Kinda random, but pretty good! Would be better with Parmesan crisps. Might try that next time.

Dinner at Mom's: Baked rockfish, mashed potatoes, sauteed broccoli rabe. Small slice of cake for dessert. This fish was nice and fresh!

Before I left for my office this morning I put a   Chicken and Rice Casserole   in my oven Timed Bake.

..... Chicken Breasts, Rice, Mushrooms, Mushroom Cream Soup, and a package of frozen mixed vegetables.

I will probably make a small green salad to go with dinner.

Sarah

This is close to what I have in mind:
     Sauteed Onion
     RoTel tomatoes/green chilies
     Garbanzo Beans (to simulate Indian Chana)
     Tikka Masala sauce (serious herbs and SPICES)

     This gets served with rice.  A sort of do it yourself Indian meal

It hits the spot once in awhile.

I heated up a packaged frozen Chicken Alfredo. Meh.

The Caesar Salad I made was also mediocre because I didn’t have any anchovies in the pantry.

I made mac and cheese, Cracker Barrel recipe. Added some sharp cheddar diced up and sprinkled some crushed crackers on top before it went in the oven.
