I forgot to mention that Potato Stix are good sprinkled on chili. The best Potato Stix are made by UTZ Foods. They can be found at Wally World.

We eat chili probably three times a month. It’s a regular part of our diet.

We like our chili super simple and mild, though. I have had friends call my version of chili “bean soup”.

Ground beef, Mrs. Grimes chili beans (with the added chili seasoning), tomato juice, and a little extra chili powder. Super easy to make and we all like it, even the pickiest kids.

Here's what I usually make.  It's similar to what you'd get at a nicer restaurant with a taste seasoning like Wendy's style, but of course much fresher tasting.  It's my own recipe so enjoy. 


Cooking Time: 3 hr
Ingredients
•   1 1/2 pounds ground beef (cook in skillet till crumbled)
•   > or 1 pound Stew Meat  (sear in skillet first)
•   1 29-ounce can tomato sauce
•   1 29-ounce can kidney beans with liquid
•   1 can pinto beans with liquid
•   1 Can Hot Chili Beans w liquid
•   1 medium onion, diced
•   2 green chiles, diced
•   2 Jalepenos, No seeds, no membrane diced
•   3 medium tomatoes, chopped or can of diced
•   2 teaspoons cumin powder
•   3 tablespoons chili powder
•   1 1/2 teaspoon black pepper
•   2 teaspoons salt
•   2 cups water
•   Cayenne to taste  (I tend to use a lot)

Cook in large pot for 3 hours stirring every so often.

Chili is very personal and it seems everybody has their own way of making it. This is the one I make and I use mild chili power. Feel free to use hot and or adjust the amount to your taste.

2 pounds browned ground beef
1 or more large onion chopped fine(I like two)
2 16 oz cans tomatoes.
2 16 oz cans black or kidney beans
2 teaspoons salt
2 level table spoons chili powder
Place in crock pot on low for 8 or more hours.

Ooh chili!  I can eat chili when it’s cold outside, feels great outside, or even if it’s steaming hot outside.  Many people I know only eat chili in the winter time, but I can eat a good bowl of chili any time, any place!!

Chili seems to taste better the next day after cooking, and it freezes well.

I've made it all different ways, but prefer black beans and potluck with meat, which is everything. ground pork is excellent and I'll throw in lots of stuff at times: beef, chicken, pork, hotdogs, shrimp, venison, whatever protein I have in the fridge. I definitely use hot peppers, either jalapeño or Serrano and onion.

I love Chili with or without beans,....   
....usually with chopped onions and grated cheese on top.   
I also like it on or with hotdogs...
