Title: For the Love of Mushrooms!

1)  Whats your favourite way to eat a Fungi?  Why? Why Do you LOVE mushrooms?!? 

Mine is Beef and Mushroom Pie. ( specifically from a french baker up the road from where I live )

2) If you had to choose between a hot date or a hot mushroom dinner which would you pick and Why?

Ok so I would choose the hot date BUT I would demand to be taken to dinner somewhere where they serve Beef and mushroom pies!  I'm thinking the french sort  ( god I'm hungry...)

Good for you!  I see you're not hard to please! 

So, I have to remember that everyone here is from all over the world and I have this strong urge to include lamb (which I love) with mushrooms but lamb isn't that common here.  Anyway, that said, I may sound a little weird explaining things but don't want to goof up.

So, I offer my recipe for BSOS.  Now, SOS, not to be confused with the emergency signal, is slang Sh*t on a Shingle (slop being nice) and is more readily know as "chipped beef" and has a sauce,  which you heat up and serve over buscuits or toast. 

Back during my college days, before microwaves, in order to survive, I usually ate ground beef.  And occasionally had the SOS or chipped beef. 

Then one day, all I had for food was hamburger, a few cans of mushroom soup and some canned mushrooms and bread.  I cooked or browned the hamburger and placed it into a pot which I had already placed 3 cans of mushroom soup and mushrooms.  I seasoned the ground beef and then placed into the pot adding a quarter stick of butter. 

That done, I toasted a couple pieces of bread and poured the mushroom soup/hamburger onto the toast.  As the idea had come from the chipped beef or SOS, I apply coined my concoction BSOS or Bird Sh*t on a shingle.

I sometimes do this every few months because it's relatively easy to make and stores well in sealed mason jars.

Saute the mushrooms and add to any cooked vegetable or grilled meat. This makes a bland dinner delicious.

My favorite way to eat mushrooms is to saute them in butter with a little garlic. But I love mushrooms any way. Raw in salads or just by themselves, in omlettes, with steak, stuffed, on burgers, on pizza, in pasta sauce, in gravy, etc.

Hmmm well I would choose the hot date but like you I would order mushrooms at dinner.  Its shocking that there are people who don't like mushrooms but they do exist sadly. The first time Tristan and I ate pizza together he started taking the mushrooms off his pizza and putting them on mine. He said he wasn't wild about mushrooms. Gasp!! If he wasn't so sweet and wasn't so hot that could of been a deal breaker! How can someone not like mushrooms but love vegemite???? It's madness I tell you.

They can't treat us mushroom lovers like mushrooms!!!!!  Viva La Mush-Lution!

Another way I personally like mushrooms are the big Portebello's stuff with crab and cheese and baked in a good Reisling!

Beef and mushroom pie sounds interesting, must be a NZ thang but like the idea.  You'll have to post more infoon it.

Now cassi - I read through your recipe, I think I've got it, I heat up lots of mushroom soup, pour it over a brick, and then munch munch crunch crunch. Did I get it right? It feels like I missed a step?  ( forgive me I'm foreign..)

Ive made beef and mushroom pie. I don't know if its common in America though. Its a German recipie my grandma gave me. My dad totally loves it.

Wow, was I that bad? 

1).  Brown hamburger or whatever meat you want to use.
2).  Add to condensed Mushroom soup and simmer, adding season to taste.
3).  Either bake biscuits or toast bread, placing whichever onto a plate (not brick), gently ladle the BSOS onto
      either the toast or biscuit and enjoy.

I'm assuming you were misled by the Bird S*it On a Shingle.  Shingle here in this case would be the toast as opposed to bricks or that disease people get.

As far as Beef/Mushroom pie - never heard of it before you mentioned it.

AHHHHH!!! Cream of mushroom soup!! Ewwwwwwwwwwww! !! I love mushrooms but cream of mushroom soup is NASTY!  My dad used that stuff a lot when I was growing up. Anyone who brings it into my house gets lashed with a whip! Just Ewww!

I never had any mushrooms that make you high.

Sometimes at Asian food buffets they have entrees that are or are almost all mushrooms.

Usually, the Portabellos are the largest from my experience.  I've personally never have had any magic mushrooms.

Grilled portabella mushroom burger...

Any mushroom is fine. On salad, in gravy on  op of a pork chop, on pizza, in Asian food...

Thank you Sonja for starting this thread regarding our love for Mushrooms... it is difficult to believe that there are those that do not like mushrooms in any shape or form.

I do like the common Button Mushrooms the most, I always buy the 2 pound box of slice mushrooms to:
> put raw on my salads or to
> put in my omelettes,
> sauteed with onions to put with my steak
> put them in my pasta sauce as it cooks and simmers,
> put them in my casseroles such as green bean casserole, chicken and rice casserole, shepherds pie, etc.
      (note: classic Shepherds pie is made with Lamb, the American version is Cottage pie made with Beef)
> sauteed mushrooms on a hamburger.
> fried hamburger meat, mushrooms and gravy with mashed potatoes.

Portobello and Shiitake mushrooms are tasty and terrific too but a bit more expensive.

.... and don't forget about Cream of Mushroom Soup... served with a toasted cheese sandwich it makes a nice lunch on a cold day.  Important: when heating a cream soup it is imperative to be careful to not overheat or to bring it to a boil, accidentally or on purpose, it will "break" the cream and the soup will be watery not creamy.  Never over 160 degrees F.

When I am out of fresh mushrooms to add to my cooked foods, a can or two of sliced mushrooms is an acceptable choice for anything other than putting on my salad (I want raw mushrooms for my salads)

I have most likely forgotten a few of my favorite uses for mushrooms..... but I may add to this in the future.

Interesting topic. I just ran across it, and by coincidence tonight I made one of my favorite mushroom-based dinners. Sliced portobellos, thin sliced onions, and asparagus stir fried in olive oil. Eaten in whole wheat tortillas with shredded cheese and thousand island dressing. Omm nomm nomm!

We had a neighbor over this evening, since he was going to starve with his wife out of town, and he went gaga over it. His wife will be calling the lady next door for her recipe.

Thank you Steph, sounds awesome.  Will have to try doing that.  Olive oil and wine tend to become my best friend when I cook.  Probably should use more of the wine in the food instead of with :)

Wow - I don't mean to 'out' you but you sound like you actually know what you're talking about, I take it your pretty handy in the kitchen?  Any formal training?  Chef by Night or just ...? ???

Aspiringperson - Some slob comes up to you holding a blueberry muffin and an espresso, you're about to take said offer and smile when you smell what can only be the worlds best sauteed mushrooms on steak oozing out of nearby restaurant, What do YOU do??..... ;)

Yes, kind of unintentionally. I'm generally a middling carnivore (chicken, turkey, and fish mostly), but this one doesn't have any meat in it at all, much to the chagrin of my dog.

So, I've been trying to eat healthier and that includes salads, which I like to add shrimp, olives and of course mushrooms. 

I've been buying the mushrooms whole packaged and take them out and put them in a few baggies.  When I'm ready to use them, I use my egg slicer to slice the mushrooms.  Also do this with large pitted olives.

I've noticed that the mushrooms don't stay fresh too long.  Any suggestions on fix'n this?

@ Cassie:   From one mushroom lover to another....   NO, NO, NO... no baggy!!!  :eusa_naughty: :eusa_hand: You have to be careful with temporarily storing mushrooms in your fridge...  putting them in an air tight plastic baggy is NOT GOOD, they will get soggy, slimy and nasty.  Either leave the end of the baggy open or the best thing is to put them in a paper bag not tightly closed... they need air to keep them nice tasting and nice looking for any length of time.

Mushroom curry (of course) very tasty , chicken and mushroom pie with a very short pastry . when I have a fried breakfast I cook bacon first then fry sliced shrooms in the bacon fat as they are good sponges for the flavor

Aspiringperson - Excellent and sound advice! ....However, if you don't have any paper bags lying about I suggest the following steps.
Step 1)  open your cake hole and put mushrooms inside.
step 2) open and close cake hole rapidly - munch, munch on the exotic taste of the delectable fungus.
step 3) swallow and store said mushrooms in your tummy.
step 4) When you need more mushrooms go buy more!......

Davina - fried mushrooms are Awesome!!, nothing makes makes bacon and eggs taste as good as when they're accompanied with fried mushrooms.... (stomach starts to grumble...)

Here is one of the ways I like mushrooms!!!
I forgot to post this picture last week.  I made a large Chef Salad for 2 of my friends and myself to share for lunch over the weekend.   
I put everything on it...  Romaine Lettuce, Tomatoes, Bell Pepper, Cucumber, Celery, Hard Boiled Egg, Sliced Mushrooms, Sliced Beets, Dill Pickles, and Black Olives.  We topped it with fresh grated Parmesan Cheese... and my homemade Italian dressing.

Hiya Sonja,

It's a neat restaurant chain in the US. To my knowledge every single one is different inside, very eclectic, with a slightly different menu.

I don't think there are any in NZ!
