I'm a relatively newly-awakened trans woman, out to myself just nine months ago at the age of 59. When I started to realize I was a woman, I found new resolve to lose weight; and I've lost over 100 lbs since March. I'm getting close to my goal, which means it won't be long before I can resume my passionate love affair with food.

I love to cook, but I don't have much experience at it. After several years of wishing, I finally learned how to make pizza; I thought it was going to be so hard, and it's so simple I could kick myself for having let my fear get the better of me for so long. I recently bought my first real food processor; it hasn't even arrived yet, but it will make fixing those veggies I've started adding to my omelets and baked potatoes so much easier to prepare.

As little as I know, I expect to do a lot of listening and not much posting of my own; but I wanted to announce myself and say I'm glad there's a section devoted to cooking. In gratitude, I want to share a recipe that I tend to make whenever I have to take food to a party; it's a very simple cake that usually gets great reviews. I found it in a home-brew church recipe book put together in the 1970s; recently, I found a few very similar recipes on the internet.

Grannie Bailey's Cake

Sift:   2 c. sugar
   2 c. self-rising flour
   1 tsp. salt
   1 tsp. soda

Stir in: 2 eggs, 1 can crushed pineapple slightly drained. Pour into 9 x 13 greased pan. Pour over top 1/2 c. crumbled brown sugar, 1 c. chopped nuts. Bake 40-45 min. at 350°. While cake is baking mix glaze:

1 stick oleo [I always use butter]
1 c. evaporated milk
1/2 c. sugar
1 tsp. vanilla

Bring to boil & cook for 5 min. Cool. [I don't let it cool, so that it will seep into the cake rather than lie on top of it.] Pour over top of cake as soon as it comes out of the oven.

That sounds really good. What is oleo?????

Oleo is an older name for margarine. Sometimes in cooking there is an advantage to using margarine instead of butter but much of the time they are interchangeable.
