I am fond of the fat pasta in lasagna, a good tomato based sauce, and the cheeses.

You can keep all the dog food for Fido.   :)

Yeah, even lasagna that cost me a little more than $3 (and that was in a menu with soup) at our local supermarket was delicious. I never had bad lasagna or it may be that my standards are low, I don't know, but I definitely like it.

Lasagna is good measure of the messiness of jobs for friends. 
The more lasagna offered, the ickier the job.

Make up a good marinara.  If there's a doubt, add more garlic and basil.

Mix up ricotta, cottage cheese, parm, mozzarella, lots of garlic, some basil, a dash of oregano, 2 or 3 eggs and more garlic.  Mixing in some pancetta or just crumbled Italian sausage is a good idea here if you want it.
 
Slap a bit of marinara into a pan.  Layer uncooked noodles on top, coat the noodles with marinara then cheese mixture.  Sprinkle more mozzarella and garlic on, add another layer of noodles, sauce, and cheese.  Stack that thing until it hits the top of the pan.

Cover with some oiled aluminum foil to keep the top layer of cheese from getting hard.  Bake for ~45 minutes at 350F/175C then remove foil, continue to cook until the cheese is nice and golden.


And just like cannibal barbecue in the deep south, the secret is in the sauce so put a bit of effort into it.

I love it, my mum used to make the absolute best lasagna, until she turned Vegan.
I hadn't had it in years untill I returned from Switzerland, but this time it was made with Vegetables D:

I love lasagna. Unfortunately, there are few worse things for my diet. I mean, you have three bites of most lasagnas and that's a meal! And I can't eat just three bites, so I stay away from it (and it is hard to resist).

Yeah, they're one quart containers that are microwave and oven safe so I can use them for heating full servings  ;D

I often cook enough for 2-4 servings so they're also pretty convenient, especially on nights when I don't feel like cooking

Kinda making my own TV dinners LOL

Haven't made it in a while but my specialty is a 4 pepper 5 cheese version.

The "sauce" is diced red, green,yellow, and orange bell peppers and diced tomatoes with whatever seasonings I feel like, oregano, basil, garlic, and onion usually.
Cheese layers are ricotta, provolone, and mozzarella using shredded parmesan and  asiago on the top only.

Have any of you tried vegetarian lasagna?  It it simply like regular lasagna but without any meat in the sauce?  Or did you add veggies like mushrooms?  Tonya, is your lasagna with peppers a vegetarian lasagna?

Definitely I put about 2-3 pounds of cheese in mine when you factor in mozzarellas provolones parmigiana ricotta and sauce I love mine dripping

Oh you should see my pizza when I make it. Thick as lasagna 2 pounds of cheese homemade crust ok I’m lazy on sauce but a large jar of that and last time I made it it had 3 pounds ground beef a layer of pepperoni and a pound of sausage. Did I mention I love cooking haha I am an overnight baker after all

I’m having chicken soup got some breasts out which I can make some stock out of. Maybe pan fry em up a bit to add a crunch and extract all those juices throw in crock pot cook a few hours

I like some of the store bought frozen lasagna, but even I can make some good lasagna at home from scratch.  That is amazing in itself.   :)

OK, I see how things are going to be.  :laugh:

We had lasagna for lunch today, fresh sheets, so no boiling.

Lasagna is fun because there's a ton of "wrong" ways to make it that usually end up tasting pretty awesome.

Yeah, we probably made it wrong since neither one of us is the least bit Italian.  ;D

Still good, though.

I just saw this now.  That version is meatless so would be vegetarian but not vegan at least because of the cheeses.

That is true I once, when vegetarian, made one no meats but musta screwed up some it really tasted like peppers and onions. Good thing I love that taste but definitely not something everyone would like

Not to hate on vegans but omg I ever could do that one those “fake” cheeses just don’t compare to the real thing.  I mean Muenster nuff said(drops the mic)psssshawww haha

Actually I really don’t follow a recipe lasagna is self explanatory. Now obviously if making your own sauces and pasta that’s different my recipe is just all the things I love in lasagna burger cheese tons of cheese. Sauce tons of that and I usually prefer boil. Have done no boil. Then season to taste. Remember the most important seasoning in your cabinet is salt. But never ever use that stuff in the round containers ewww gross. The best salt and actually what professional chefs use, hilariously I dated one, is kosher it has an amazing profile. I’m also a sucker for rosemary not really an Italian seasoning but amazing none the less

I’m sure there’s a lot of omfg what is this cuz it sure don’t taste like cheese. Just like boca was really my only enjoyable fake meat.  Most morning star ones were ew. And while I love tofu tofurkey was so wrong. Then again there weren’t as many choices then I was veg over 10 years ago. Most of that stuff was just coming out. Heck you can get lentil pasta now which has 23g protein per serving. My dr at the time advised me to stop because of low protein. Didn’t want boca burgers every day or tofu every day. So I just ate my salads and such pastas extra veggies.  Now so many meat free protein choices. Of course don’t wanna give up that mmmmm meaty lasagna now or my bloody juicy cheeseburger which was only thing I EVER craved omg still won’t eat steak though bleh

Vegetarian can definitely be tricky since as you found out it's easy to overpower everything with peppers and onions.  When I've made it I had better results going easier than normal on the onion and peppers but bumping up the garlic and basil.  Toss a bit more ricotta than normal in there and it works out pretty well in my experience.  Spinach can help balance the flavor as well.

See I didn’t care for spinach then but omg spinach in lasagna sounds soooooooooo good and still no such thing as too much ricotta

A wonderful cold winter day meal.   
It's fairly easy to make a large Lasagna for entertaining many guests.

Lots of cheese and meat, and nice and moist.   
Nothing worse that dry Lasagna.

A wonderful cold winter day meal.   
It's fairly easy to make a large Lasagna for entertaining many guests.

Lots of cheese and meat, and nice and moist.   
Nothing worse that dry Lasagna.

I keep several versions around.   My quick and easy favorite that just tastes good and is easy to make and the "I'm trying to impress someone" version.   I have a 6 person version if you have tons of kids that works well too if you want it. 

Easy version

•   3/4 pound ground beef
•   2 garlic cloves, minced
•   1 can (14-1/2 ounces) diced tomatoes with basil, oregano and garlic, undrained
•   2 jars (14 ounces each) spaghetti sauce
•   2/3 cup condensed cream of onion soup, undiluted
•   2 large eggs, lightly beaten
•   1-1/4 cups 1% cottage cheese
•   3/4 teaspoon Italian seasoning
•   9 no-cook lasagna noodles
•   1/2 cup shredded Colby-Monterey Jack cheese
•   1/2 cup shredded part-skim mozzarella cheese
Directions
In a large skillet, cook beef and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes and spaghetti sauce; heat through. Transfer to a large bowl.
In a small bowl, combine the soup, eggs, cottage cheese and Italian seasoning.
Return 1 cup meat sauce to the skillet; spread evenly. Layer with 1 cup cottage cheese mixture, 1-1/2 cups meat sauce and half of the noodles, breaking to fit. Repeat layers of cottage cheese mixture, meat sauce and noodles. Top with remaining meat sauce. Bring to a boil. Reduce heat; cover and simmer for 15-17 minutes or until noodles are tender.
Remove from the heat. Sprinkle with shredded cheeses; cover and let stand for 2 minutes or until melted. Yield: 6 servings.    I typically use a 9x11 pan instead of the skillet, but the skillet works well too. 


Fancy version

Ingredients
•   1 pound sweet Italian sausage
•   1 pound lean ground beef
•   1 large white onion, minced
•   5 cloves garlic, crushed
•   1 (28 ounce can) crushed tomatoes
•   2 (6 ounce can) tomato paste
•   1 (15 oz can) tomato sauce
•   ½ cup chicken broth
•   2 tablespoons white sugar
•   ½ cup chopped fresh basil
•   1 teaspoon fennel seeds
•   1 teaspoon ground oregano
•   ½ teaspoon salt
•   ¼ teaspoon ground black pepper
•   ¼ cup + 2 tablespoons chopped fresh parsley (divided)
•   1 pound lasagna noodles
•   30 ounces ricotta cheese
•   1 large egg
•   ½ teaspoon salt
•   ⅛ teaspoon ground nutmeg
•   1 pound deli sliced mozzarella cheese
•   1 cup freshly grated Parmesan cheese
Instructions
1.   In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, ½ teaspoon salt, pepper, and ¼ cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and chicken broth. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally.
2.   Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water.
3.   In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, ½ teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna.
4.   Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan.
5.   To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with ⅓ of the ricotta cheese mixture. Top with ¼ of mozzarella cheese slices. Spoon 1½ cups meat sauce over mozzarella, then sprinkle with ¼ cup parmesan cheese. Repeat layering two more times to create three complete layers. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella and Parmesan cheese. Cover loosely with aluminum foil.
6.   Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes to allow cheese to brown. Serve hot.


This one tastes like a restaurant.  It seems very over the top, but amazingly good.  I only make it to impress people.  You can substitute fresh tomatoes easily in place of the canned ones and sometimes when you really want that special taste it's best.   

Chicken Alfredo version.

Ingredients
•   4 ounces thinly sliced pancetta, cut into strips
•   3 ounces thinly sliced prosciutto or deli ham, cut into strips
•   3 cups shredded rotisserie chicken
•   5 tablespoons unsalted butter, cubed
•   1/4 cup all-purpose flour
•   4 cups whole milk
•   2 cups shredded Asiago cheese, divided
•   2 tablespoons minced fresh parsley, divided
•   1/4 teaspoon coarsely ground pepper
•   Pinch ground nutmeg
•   9 no-cook lasagna noodles
•   1-1/2 cups shredded part-skim mozzarella cheese
•   1-1/2 cups shredded Parmesan cheese
Directions
•   In a large skillet, cook pancetta and prosciutto over medium heat until browned. Drain on paper towels. Transfer to a large bowl; add chicken and toss to combine.
•   For sauce, in a large saucepan, melt butter over medium heat. Stir in flour until smooth; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Remove from heat; stir in 1/2 cup Asiago cheese, 1 tablespoon parsley, pepper and nutmeg.
•   Preheat oven to 375°. Spread 1/2 cup sauce into a greased 13x9-in. baking dish. Layer with a third of each of the following: noodles, sauce, meat mixture, Asiago, mozzarella and Parmesan cheeses. Repeat layers twice.
•   Bake, covered, 30 minutes. Uncover; bake 15 minutes longer or until bubbly. Sprinkle with remaining parsley. Let stand 10 minutes before serving.

Test Kitchen Tips
•  Swap bacon for the pancetta if you want a little smoky action in your lasagna. Mmmmmm.
•  Rotisserie chicken keeps this dish ultra simple, but really, any leftover pulled or cubed chicken will do.
•  Make it vegetarian by subbing 3 cups of sauteed vegetables for the meat. We like a combo of mushrooms and squash. Zucchini and butternut work well, too.


For something different.  It's well worth the effort.   Enjoy!

My go to is a very simple comfort food version that my mom made, I and my wife made, and now my kids are making, and like any good comfort food it takes me back to my childhood, on a cold autumn day when the smell from mom's kitchen drove a young kid crazy.

For fancy- I've been making one that has bechamel sauce instead of ricotta, and it is a creamy gooey wonderful dish!

Remember the most important seasoning in your cabinet is salt. But never ever use that stuff in the round containers ewww gross. The best salt and actually what professional chefs use, hilariously I dated one, is kosher it has an amazing profile.

I just bought a three pound pound box of Diamond Kosher salt.  The red one, for cooking. 

I also noticed that many of Cabot's cheeses are low lactose. I got some Colby in addition to their Cheddar cheese.

I like  lasagna but only eat it occasionally due to lactose issues.

I went to a big super market and was recently surprised to see how many different varieties of frozen lasagna they had for sale.  They also had freshly made lasagna.
