And he's got an amazingly soulful voice. I'm in love with his voice almost as much as his guitar work.

Gov't Mule is dirty Georgia hippie music :).  I saw them a few times when I lived there.

Here is another one I thought of, I don't know if it qualifies as a real cover or not.

This is just a young kid on guitar playing an old indonesian keroncong song. He's not the world's greatest guitarist technically but somehow he makes it very beautiful.
