What to do with all those Girl Scout Cookies?

I've been stocking up on Girl Scout shortbread cookies for years so I can smear them with caramel made from condensed milk. It's an old recipe that Civil War soldiers used with their tinned milk rations. You boil the can (I know, bomb!) don't try it at home. I'm a professional, so it's OK. Hugs, Devlyn

Have you ever tried graham crackers dipped in canned sweetened condensed milk?

I don't do that anymore, unless I really want to spike my blood sugar.

Edit: that reminds me that there is an easy recipe for cookie bars on the side of Eagle brand sweetened condensed milk.

Graham cracker crumbs and melted butter mixed together and smushed into a rectangular (13 x 9) baking dish.  Pour on a whole can of sweetened condensed milk, top with about a cup of semi-sweet chocolate chips and enough dried flaked coconut to cover it all.  Bake at 350F for about 30 minutes or so.

Can't remember the exact quantities.
