Gumbo is a kind of seafood stew that everybody cooks a little differently. Roux plus ocean animals and okra and stuff. Grits is pretty much polenta but prepared like hot cereal and usually eaten along with greasy savory stuff. I've heard that people in the U.S. Northeast eat it sweet but that just sounds crazy to me. I wouldn't try that.
