Butter chicken curry with home made nan bread, its very rich 50 grams of butter , 150ml yogurt and 150ml single cream bit on the rich side for my taste but very nice. Enough left for Thursday as well.

A spicy black bean burger on a whole grain wheat bun, with pepperjack, home-mixed sriracha and ranch aioli and a fried egg.  :icon_dribble:

** The "aioli" is 2 parts YumYum sauce to 1 part Ranch dressing, with Sriracha to taste!

This. Hash Brown-Crusted Quiche with Sausage.

Cook time
55 minutes
Total time
1 hour 5 minutes

Serves: 8
Ingredients
•   • 3 cups Simply Potatoes shredded hash browns (found in the refrigerator section at the market)
•   • 4 tablespoons (1/4 cup) unsalted butter, melted
•   • salt and pepper
•   • 1 cup (about 8 ounces) seasoned mild country pork sausage
•   • 6 large eggs
•   • 1/4 cup heavy whipping cream
•   • 1 cup shredded cheddar cheese
•   • 1 cup shredded Monterey jack cheese
•   • 2 scallions, finely chopped
Directions
1.   Preheat oven to 375 degrees. Coat a 9-inch pie plate with non-stick cooking spray.
2.   In a large bowl gently toss the hash browns with the butter to coat. Season with salt and pepper. Press the hash browns into the bottom and up the sides of the plate to form a crust. Bake for approximately 25-30 minutes or until golden brown.
3.   In the meantime, sauté the ground sausage in a skillet over medium-high heat, breaking it up with a wooden spoon, until no pink remains, about 5 minutes. Set aside to cool.
4.   In the large bowl you used for the hash browns, whisk together the eggs, cream, cheeses, and scallions. Season with a dash of salt and pepper. Add in the cooked sausage crumbles. Mix to combine.
5.   Pour mixture on top of the hash brown crust. Bake for approximately 30 minutes or until set. Let cool slightly, cut into wedges and serve.

The other night I made stuffed peppers and there was extra filling (ground beef, rice, onions, mushrooms)  so tonight I got a can of Old El Paso refried beans, some tortillas, and cheese on the way home and made quick, easy burritos.

My sister made meatloaf with bacon strips on top, baked potato, and whole kernel corn with bacon bits. I hope she threw this particular meatloaf recipe away. I'm not sure what she did but it was too sweet.

Years ago my grandparents came out to visit the family. As both my parents work, my mom set up a pot of chilly and ask my grandmother to finish it off by opening a few cans, adding the contents and turning on the heat. We sat down for dinner that night, took a bowl and it tasted really off. We sat there for a while trying to determine if it was eatable and if something had gone bad. Finally my grandmother fessed up. She had a real sweet tooth and she brought from home some jars of tomatoes she had canned in sugar juice. She figured instead of wasting the cans of tomatoes my mom had set out, she would use the jars from the camper that were packed sugar.  :icon_blah: We then knew it was safe to eat even though it wasn't a favorite.

I see a million recipes for baking the jackfruit, but I marinated mine, then dredged it in flour and fried it to a crisp. I used those crunchy pieces in a "beef" stew and a barbecue pulled "pork" and my meat eating friends loved it. How do you make yours?

Dinner has not been fully decided on but I'll probably have a square from the Lasagna I made a few nights ago

For now I'm snacking on jerky, saltines and peanut butter (Field ration type stuff)

I made fried chicken, mashed potatoes, gravy and pan fried corn. Our next door neighbor is an older lady from Georgia and she taught me how to make fried chicken. She even gave me one of her black iron frying pans to fry it in.

  My sister made us  some boxed cheese and broccoli Roni, Canned green beans, and fried stuffe chicken breast which she proceeded to burn on one side. She was upset by this of course but I found the chicken reminding me of my moms fried chicken as a kid. Frying chicken for 7 invariably resulted in a few pieces being singed a bit. Those were the one I preferred.

Cod steaks in yogurt, an Indian curry. 150 ml of yogurt with 8 cloves of garlic and an onion made into a paste makes an unusual taste, sour and sweet at the same time and needed the rice and veg with it.

I got off work early so I decided to do Greek night. I'm making Greek meatballs with Tzatziki sauce and spanakopita. No I'm not Greek but I totally love Greek food.
