i've discovered a whole new love for it.

Today i'm doing an apple and chicken stir fry for my sunday dinner

Me, I have one for brownies, be sure to read the recipe all the way through first as you will be making two different batters and combining them just before baking

4 squares unsweetened chocolate
3/4 cup (1-1/2 sticks) butter
2-1/2 cups sugar
5 eggs
1-1/4 cups flour
1 8 oz pkg cream cheese, softened

Preheat oven to 350°F. Grease a 13x9-inch aluminum foil baking pan.
Read through this recipe entirely before you begin, as you will need to divide ingredients into separate batters in order to create two layers.

Microwave together the chocolate and butter on high setting 2 minutes. Stir in 2 cups of the sugar and blend well. Stir in 4 eggs and 1 cup of flour. Spread this mixture in the greased pan.

Beat cream cheese, gradually adding remaining ingredients. Combine well.

Spoon second mixture over batter already in pan. Swirl together lightly stirring with knife to create a marble-like pattern. Bake in Preheated 350 degree oven for 40 minutes or until toothpick has grainy fudge bits but is not clean, like in a cake. Be careful not to overbake.

I enjoy cooking too, although I suspect a large part of that enjoyment depends on  the fact that I am not required to do it and I am (fortunately) blessed by someone who has assumed that job as a major part of our lives.

I've found an enjoyment of baking too and I think recipe sharing can be a lot of fun.  Here's a cookie recipe that I developed from a number of German Lebkuchen recipes.  I made these last Christmas and they came out quite weel:

Lebkuchen á lá Emelye

250 g sugar               1 Tbsn Vanillenzucker or Vanilla extract
3 eggs               250 g finely ground almonds
½ tspn ground clove         ½ tspn ground cinnamon
½ tspn lemon zest            Pinch of Cardamon   (1/16th tspn?)   
40 g candied lemon peel         40 g candied orange peel
150 g flour               1 tspn double acting baking powder
2 Tbspn Rum or equivalent amount of rum extract

Cream the eggs, sugar and vanilla.  Add the spices, zest, rum and candied peel.  Stir in the ground almonds.  Slowly sift in the baking powder and flour until the dough is stiff.  Using two spoons drop mounds of dough about 2 inches (5 cm) to 3 inches (7½ cm) across onto a parchment lined cookie sheet.  Garnish with almonds, halved or slivered (doesn't matter) and bake in a 350ºF (180ºC) oven for about 15 to 20 minutes.  (Keep an eye on the first batch, all ovens are different!)

Frost the cookies with a thin frosting made from powdered sugar and milk flavored with almond extract, lemon juice or rum.

Makes about 2 ½ to 3 dozen depending on how big ya make 'em.  Enjoy!

I just cooked my dinner.

Fresh Tuna steak, pan cooked in olive Oil.
Several large prawns, cut up and added to the tuna.
Sweetcorn, mixed with spring onions,some garlic and fresh French beans... all mixed in with  low fat Mayonaise.

Served on a bed of fresh letuce...

It was yummy

100 degrees out yesterday, and I was canning dilled green beans and blueberry jam. Without air conditioning... vodka girly drinks helped!

I'm a decent cook.  I don't enjoy cooking, but I enjoy eating my concoctions.

This was my most recent.

CURRIED CHICKEN AND RICE.

2 boneless, skinless chicken breasts
1 heaping tablespoon of peanut butter
1/4-1/2 cup of soya sauce
2-3 heaping teaspoons of curry (more or less to taste.  I use more than this)
2 teaspoons of maraschino cherry juice
a good sprinkle each of thyme and sage
some pepper
a splash of olive oil
a splash of rice vinegar

Stab the chicken breasts repeatedly with a fork, then cube the chicken breasts and put into a sealable container.

Mix together all ingredients and add to the chicken breasts.  If necessary to make this cover the chicken breasts, add some water and stir very well.

Marinate for 2-3 hours.  Dump the whole thing into a largish baking pan.  It has to be bigger than necessary for the chicken. Bake at about 400 F until the chicken breast is cooked through.  (I suck with time)

While you're waiting for this to bake, cook some rice.  It should be sufficent rice to mostly fill the baking pan, but not so much as to be unstirrable in the baking pan.

When the chicken is done, add some water to the pan and stir the marinade well.  Add the rice and some frozen vegetables and stir very well, until the marinade (now the sauce) is covering it. When adding the water, don't add so much that the marinade will make it all a soupy mess.

Bake uncovered for an additional 15 or so minutes, stirring regularly, which will cook the veggies and let the sauce soak into the veggies and rice.

Serve.  This makes about 4 servings, depending on how much rice you use and it is very, very, very, very tasty.

Cooking can be fun.
I enjoy cooking when I can/will. And since I made my own recipe (I just cant say what the exact specs are since I have yet to catalog it, but I will share it after I catalog it) it basically sliced potato's, which are cut vertically about 1/4 of an inch or so, between slices, then I add butter/cooking oil/margarine, with a couple of spices and some salt.
