I'm a decent cook. I don't enjoy cooking, but I enjoy eating my concoctions.
This was my most recent.
CURRIED CHICKEN AND RICE.
2 boneless, skinless chicken breasts
1 heaping tablespoon of peanut butter
1/4-1/2 cup of soya sauce
2-3 heaping teaspoons of curry (more or less to taste. I use more than this)
2 teaspoons of maraschino cherry juice
a good sprinkle each of thyme and sage
some pepper
a splash of olive oil
a splash of rice vinegar
Stab the chicken breasts repeatedly with a fork, then cube the chicken breasts and put into a sealable container.
Mix together all ingredients and add to the chicken breasts. If necessary to make this cover the chicken breasts, add some water and stir very well.
Marinate for 2-3 hours. Dump the whole thing into a largish baking pan. It has to be bigger than necessary for the chicken. Bake at about 400 F until the chicken breast is cooked through. (I suck with time)
While you're waiting for this to bake, cook some rice. It should be sufficent rice to mostly fill the baking pan, but not so much as to be unstirrable in the baking pan.
When the chicken is done, add some water to the pan and stir the marinade well. Add the rice and some frozen vegetables and stir very well, until the marinade (now the sauce) is covering it. When adding the water, don't add so much that the marinade will make it all a soupy mess.
Bake uncovered for an additional 15 or so minutes, stirring regularly, which will cook the veggies and let the sauce soak into the veggies and rice.
Serve. This makes about 4 servings, depending on how much rice you use and it is very, very, very, very tasty.
