I would agree with you that when something mutates from something to one something else it purpose becomes nearly useless. Yet in the case of the Genesis story those who support this claim support that it was written for the purpose to "refute" other stories of the time. With that notion it makes any enquiry more exciting to see how it plays into other stories. I.e. How is displays the Jewish/Christian view of God as some being greater or "better" then those of other near eastern religions.
