Hi everyone! I thought I'd share this before I whipped up a batch. These are REALLY awesome and you'd never know they were "good for you". I have been busy in the kitchen of late and I thought I'd share my guilty pleasure.
1 cup almond flour (the white stuff- order online from King Arthur Flour)
1 cup vanilla whey protein powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened (that's 2 sticks, folks)
3/4 cup splenda granular
1/4 cup brown sugar splenda blend
2 eggs
3 teaspoons vanilla extract
2 cups sugar free semi-sweet chocoloate chips (you can order this online from King Arthur Flour as well)
1 cup chopped pecans or walnuts (optional- I prefer to go without nuts, so to speak...)
Combine almond flour, vanilla whey powder, baking soda, baking powder and salt. Stir together in mixing bowl.
Preheat oven to 375 degrees. I actually found that 370 is optimal for my oven.
Using electric mixer, beat butter until creamy and fluffy. Add splenda and brown sugar splenda and beat until combined. Scrape down sides of bowl as needed.
Add eggs and vanilla and beat well
Add dry ingredients a bit at a time, adding only when previous additions are completely incorporated
Beat in chocolate chips and nuts.
Spray cookie sheets with PAM, put 1 inch rounded tablespoonfuls on sheet, placing 3-4 inches apart. Bake 10-12 mins, cool on wire racks.
Makes about 3 dozen cookies. Make sure to eat a few while still warm with milk.
