How noticeable the changes will be will partly depend on how many things that were irreversable had finished changing the last go round. Vocal cord thicken on T, and that takes some time, but lets say yours were half of where they were going when you stopped. You might notice a change in the deepening of your voice, but maybe not as radical as when you first started. keep in mind that the voice of cis males continues, in many cases, to deepen as they age. The longer you are on T, the more may change.
Since T effects people differently as individuals, I don't think your question can be answered 100%. The things that stopped, like hair growth should start again and muscle development as well.
Just as an aside, one of the things Dr.s seem to be concerned about is the ups and downs of T levels. I know you had to stop for personal reasons, but if at all possible, try to get them level and keep them that way.
