Ay ay ay! For awhile I thought I was the only one who was going to put their money where their mouth is and PROVE they can cook a steak! C'est magnifique! You know how to cook!

I've been told that the best way test "done-ness" is to make a fist and press into the skin between your thumb and index finger. Pressing your spatula (or whatever you use) in the center area of the steak will provide about the same resistance/squishy-ness when it is medium-rare.

I'm no meat chef though. But I do make awesome cakes :)

Its a get better with practice thing. As you know steaks get firmer as they cook. It just takes cooking and mashing a lot of steaks with your thumb to get the feel for exactly how well it's done.
