Mine is either bacon with cabbage and potatoes or colcannon, usually depending on what I leave out for lent (usually either sweets or meat). Simple, cheap... but deliciously Irish ;)
What else do you even need?

  my dad told me to, corned beef was not irish and he never ate it till he left home. we had new england boiled dinner every Saint Patrick's Day. i didn't care where it originated i loved it and every year i still eat the same. here is the wiki i found, but i guess anyone can edit it.
