Hasn't happened in Ireland and it's been a year or so since they made obtaining a GRC a case of filling in a simple form.

It's also very new so it will be interesting to see the rate of individuals reversing the change a couple (or more) years down the line when they realize they were in a self diagnosed phase.  Being trans or fluid (or whatever) is quite trendy right now and I suspect some will get caught up in the "thrill" of it all and ultimately regret their decision.  I've also met a few mentally fragile or immature individuals that are clearly not capable of making this type of important decision.  A Dr. diagnosis and approval is an important "gate" in my opinion.

Time will tell.

Non binary only appears 'trendy' because more young people are aware that non binary exists. And with social media it's now easier to connect with each other and share experiences about being nb. Same with how being binary trans hasn't just become 'trendy' within the last few years.

If a person does make a mistake then again they can just fill in a simple form to change their gender back. No harm done and no beurocratic unethical nonsense.
They/them pronouns preferred.
