Currently Chuy's serves amazing chile rellanos  that they will smother with a creamy green sauce.  I would eat there everyday if my waistline tolerated such.

I really enjoy authentic Mexican food, not the stuff that American restaurants and fast-food places try to claim is Mexican. There is a huge difference in the food quality and flavor of authentic Mexican dishes.

Unsure how to tell the difference unless one knows the difference!  Of course, duh.
I usually like what I can buy at most Mexican style food restaurants.

For most of my life, I did not know the difference.

One day I had a job to install a new security system at a local restaurant that had been closed for remodeling and was going to open under new management. The owners were a Mexican family who had moved to the area and purchased the restaurant.

During the installation, I interacted with many of the family members. Over many casual chats, they explained that much of what Americans identify as Mexican food is not really Mexican and more of a hybridization to make it more palatable to American tastes. When the job was finished, the owner gave me a gift certificate for a free dinner. Having been a former Boy Scout, I always follow the 13th Scout Law, "A Scout is always hungry and will never refuse a free meal."

It was fabulous. The best Mexican food I had ever eaten. Goodbye, Taco Hell, Taco John's, and their kin.  ;D

Generally yes, as long as it does not involve a bunch of beans!

WHAT?

Mexican food without beans?
Heresy! That is sacrilege.

But I won't hold it against you.

And yes, I love AUTHENTIC Mexican food. Not the stuff that American restaurants call Mexican food.

I had great Mexican food when I visited California.
For a while there was a small restaurant a mile from me that would serve Mexican food made like that.
They were from California.  They would also prepare it the way most Americans would expect.

This is hard for me to answer. I like South American food. Not specifically Mexican. I think there's a vast wealth of culinary deliciousness that goes beyond just Mexico. And I kind of only know this because my soulmate is Colombian. Where some stuff is probably similar but slightly different. In the same way that regional cooking in the UK is similar but different.

Being a Brit... I kind of spent most of my life raised on yorkshire pudding and stuff that keeps your taste buds comatose. But when you learn how to make something that's like the Mardi Gras in your mouth, when you discover how to make your face want to melt off your head because of chillis... that's very addictive, lol. In an "oh my god I want to die, someone call the fire department!" kind of way.

It's like riding a rollercoaster for the first time. Every time.

Tex Mex style, or South Western (US) cuisine?  Yes, resoundingly so.  True Mexican?  Not so much.
