Ricki

this is what i got done today from 7:20am through 6:00pm
My actual chef helped me with a lot of the food production we did it together though..
we cut open and panned up 768 airline chicken breasts then dipped them in butter and hand breaded them (recipe at end), We opened and trimmed 38 prime ribs of beef and panned them up for roasting in am.  We went to other end of building and moved 1800 serviceware pieces-sets / cases of full line upscale disposable service ware plates, cups, etc.. (about 60 cases in all, plus two movable cooking cabinets)
I managed my regular dept rounds, alas missed two meetings i thus could not attend do to BEING BUSY CHEFFING, got about 12,000.00 worth of food orders done on the internet for following day.. put out about 16 small personnel fires, printed signage for cafe, drove to the state store and got 8 gallons of zinfandel wine! Called some other vendors up for stuff, had the steamer service man in repairing the steamer then had to drag him to maintenace dept to work on new toaster under warranty as well, baby sat him on and off, he said at one point when 6 diferent people were calling my name and looking for me and delivery guys were lined up to talk to me "hey you're awfully popular aren;t you?" I said more like a freakin curse! agghhhhhh
Talked to my catering person a few times about some issues going on...
Recieevd and stored 100 poinsetta flowers for the decorations on tables..
Then assembled 14 gifts for the gift drawing we are having for our holiday party!  In between somewhere i peed a dozen times, had some starbucks coffee, played numbers at the gift shop.. then went "smile" and got my 250.00 for hittign on one during day lottery..
snacked on a sample pice of the tasty chicken we are having... (recipe follows)
umm let me see checked emails on pc only 35 or so light morning.. hehe...
that's it for about 10 1.2 -11 hours!
I crown myself super trangendered chef of the day!
Smile

Recipe:
Italian baked chicken:
chicken breast raw
seasoned bread crumbs and equal amounts parmesan grated cheese mixed togather
melted butter (can sub margarine but the butter is better in recipe)
zinfandel wine
green onion slices
dip chicken in melted butter and then coat completely in seasoned cheese / crumb mixture, place in sprayed pans.  Bake at 350 degrees 20-28 minutes depending on size or kind of chicken, when almost done pour enough wine into pan to touch bottom of chicken sprinkle with green onion slices and finish in oven 8-10 minutes.  Wonderful!
Airline chicken is an 8oz boneless breast with a small wing piece attached or left on for presentation or looks..
boneless 4 or 5 oz breasts work just as well...
skin or kinless although the skin on chicken helps to lock in more moisture, but adds fat and calories..Very easy to make your guests and So's will love! I promise!
yummy!
Enjoy!
Side note:  we are preparing for our annual Xmas party the employees recieve a free meal tomorrow at the compliments of hospital adminsitration for the holiday.. we'll feed about 1200-1250 people for breakfast-lunch (bulk of employees)-dinner.... Hate this day! Grrrrrrrrrrrrr................
total or cost to admin is about 30,000.00 for food, labor and staffing.....
Yet the employees complain cause they do not get a big bonus or gift! Go figure?
culinary kisses!

Gosh Ricki! are you trying to make me eat?  what have you heard about me Ricki?  what is it that you know?  who have you been talking to?  Just kidding!  nutty me!   :D ;D

Hey, I have to admit though, I'm starving to death now, and that is not good, for I am trying NOT to eat.  BTW you did an amazing job today; it is indeed a lot of work!  Bravo for you!

QuoteI crown myself super trangendered chef of the day

You cannot crown yourself, someone else has to; otherwise, the coronation is not valid....so I, tinkerbell, crown you as super transgender chef of the day....tadadadum......  geez, I am wacky today...LOL

Wow, that is impressive.  And it sounds like it is a high stress enviro.  I LOVE to cook, thanks for the recipe.  I cleaned it up a bit while saving it out to a file.  Here is a web version.

Italian baked chicken

Ingredients
8oz boneless breast with a small wing piece attached, raw
seasoned bread crumbs with equal amounts Parmesan grated cheese, mixed together
melted butter (can sub margarine but the butter is better in recipe)
Zinfandel wine
green onion slices

How to prepare
Dip chicken in melted butter and then coat completely in seasoned cheese / crumb mixture, place in sprayed pans.  Bake at 350 degrees 20-28 minutes depending on size or kind of chicken, when almost done pour enough wine into pan to touch bottom of chicken sprinkle with green onion slices and finish in oven 8-10 minutes.

boneless 4 or 5 oz breasts work just as well...

skin or skinless although the skin on chicken helps to lock in more moisture, but adds fat and calories..

Again thanks, I look forward to trying this.  I rarely cook with wine (usually only when preparing wild game meats) and this will give me a chance to expand on that a bit.  :)

Sheesh Ricki!  You were one busy gal!  Here's a time-saving tip:  Less coffee equals less trips to pee.  ::)

I hope your Christmas Party went well, though it sounds like you were gonna be one busy puppy.  Rest up a day or so and let us know how it went.

You have always had my vote for Super Transgendered Chef of the Day, hon,   :-*  yesterday, today and tomorrow.

Can't wait to try the chicken...sounds yummy.

Ya put your right foot in.  You put your right foot out.  You put your right foot in and you shake it all about.  You do the Andro-gyney and you turn yourself around.  That's what it's all about.

Ricki,

I don't know how you have time to let the squirrel run!  You are doing so much.  I betchya don't have time to put any calories to the waist line.

I saved your recipie.  I'm going to make it.  It sounds absolutely delicious.  Any time you want to post another, please do so.  I'm always looking for yummy recipies, especially when they seem moderately healthy.

We got many compliments as well... BUT....I knew there would be one, one lady complained and said her chicken was not cooked! Grrrr i wanted to throw it at her, but ever the service professionals we gave her prime rib instead!  Funny how come these guys that always hate something or say its underdone always eat 80% of it first>????????  The was a tiny chunk of leg on the plate how the heck could i of even figured out if it was???
