Cheesy potato wedges with crumbled bacon

Ok, I gotta tell U about this because it's my FAVE recipe!!!! I made it last night and my kids DEVOURED it!!

Enjoy!

Shenandoah Chicken

3 pounds frying chicken pieces
1 medium onion, chopped as desired (I like mine fine)
3 tablespoons butter or oil
3 1/2 cups boiling water
2 tablespoons dry white wine (optional)
2 teaspoons salt
1/8 teaspoon pepper
2 packages (10 oz) frozen mixed vegetables (corn, peas, carrots, green beans, lima beans)
1/2 pound mushrooms, sliced
1/4 cup butter or chicken fat
1/4 cup unsifted, all purpose flour
1/4 cup light cream
1 2/3 cups minute rice


   Brown chicken and onion in 3 tbs butter. Add boiling water, wine, salt and pepper. Cover; simmer 20 minutes or until chicken is just tender. add frozen vegetables. Bring to a boil, stirring occasionally to separate vegetables. Simmer 8 to 10 minutes. Place chicken and vegetables on a heated serving platter and keep warm. Reverve liquid. Saute mushrooms in 1/4 butter in a saucepan. Sprinkle in flour and stir until flour is slightly golden. Remove from heat. Gradually stir in hot chicken liquid; blend in cream. Cook and stir over medium heat until sauce comes to a boil. Prepare rice as directed on package. Spoon rice around chicken mixture on platter then pour sauce over chicken. Makes 4 or 5 servings.

Awww why do I visit this thread, I'm trying to lose weight? I'm eating some of Osiris's salsa with 4 grain tortilla chips.

two days ago I made a roast with a couple of large steaks, carrots, French cut beans, onion, Kitchen Bouquet  and beef stock.  Cooked it in the crock pot.  Yummy stuff.

I then pulled every thing out of the new stock and add some beef gravy mix.  I made sure that everything was in very small pieces and put it in the stock.  Add diced tomatoes to it and let it come to a boil.

I just finished the last of my steak stew.  OMG was that good.

@Janet, that's funny I was telling Dan I have been craving roast... Think I will make one on Monday. Yummy. :D

Baked a chicken cut down the back and opened up and layed in a roasting pan and put in wood cook stove and spiced with an amish spice mix

and then use balance in a big pot with carrots potatos and cauliflower and spices and water and made into soup and slow cooked using firebox stones to keep it off the hot wood cook stove and let the stove burn out by dark and the kitchen cool to around 40 degrees each night and bring pot back out to livingroom next morning to warm for lunch.. yummy

I am now filling my joint compound buckets with water and freezing outside to store for future ice to keep food cold in my antique wooden ice box which works great and a block of ice last a week even with it in kitchen near wood stove.

I'll store the frozen ice in basement root cellar and bury buckets filled with frozen water in straw
