Title: Americans and chili. Bowl o' red anyone?

My friend makes awesome chili, but she won't let anyone know what's in it. She's a purist, beans and rice are served as side dishes. It doesn't taste hot, but as you eat you start sweating, under the eyes, forehead, the back of your neck! Anyone else make a mean bowl o' red? Do you know a good place to get some?

Chili should NEVER have beans in it...
And yeah, the hotter the better...I found that I do have a preference for venison as opposed to beef though. The peppers seem to work a little better with the leaner meats to produce a more pure "heat".

Yes!!! If I could find a bean-less chili, I might be inclined to try it. But I've never found a bean-less chili so I simply don't touch the stuff.
Of course, this has nothing to do with chili, but the fact that I can't eat beans in any capacity. :laugh: Every type of bean makes me so sick that I can't even stand up for a good three hours after eating them. It's the most violent pain I've ever experienced outside of getting nailed by porcupine quills. Not even stomach surgery matched what I feel when I eat beans. To further complicate matters, I'm a vegetarian. And what's the staple of vegetarian foods? Beans!!

I can eat the bean stuff fair enough but the after effects are just TOO much to mention. Devastating!
So, I may try the no-bean approach - I'm a good cook BTW - and rather have beans as a side dish. I already got the idea. A must is to have vinegar in the bean-salad, say olive oil, some chopped green peppers, touch of garlic, and HOLD the onions! - it stops those nasty tummy bacterias from reaching 'firing proportions' that's what it be all about.
Beans can be healthy --- but PLEASE without the full broadside thunder. Extremely unladylike for sure.

Same as a good curry Mahsa, the chilli leaches out over night is my guess. Do you have it on toast for breakfast the next morning?

I do most of the cooking but once when we were travelling in a caravan my wife decided to make a chilli, she had never done so before. Unfortunately she thought chilli was like garlic, keep adding until the smell is right was her philosophy with garlic. Didn't work too well with the chilli, she served this poisonous concoction in the middle of the Nullarbor Plains. No medical help for days :laugh: it melted both of us in one mouthful and destroyed the coating of an aluminium pan. I took over the cooking again.

Well I have a bad case of the stinkers because I am not eating carbs with it. I rarely have toasts...carbs are the devil and I am already addicted to skittles.

Skittles are little fruit candies here in the US, and Cindy, if the stirring spoon doesn't survive it means the chili is ready!

I love chili. I recently made chicken and white bean chili. Have also made vegetarian chili.

I managed to make a decent chili by grilling lean steak, roasting poblano chilis and roasting garlic all on the bbq. It also had chipote powder in it and some stuff I don't remember at the moment but it came out well. Hot but the heat was slow to build and a nice smokey flavor.

Worked for a company where I had to go to Dallas a lot, one time I was there I when to a chili cook off. Some of the best chili I ever had !
When I was eating some, just kidding I ask the cook"where's the beans " He look at me and said you must be from the North That's how you Yankees northernized it ! We don't put beans in here! we're just cooking meat with gravy ! (and some HOT peppers and spices! )
I also noticed not a one used ground beef, most chopped up steak meat.
It's the biggest fight in our house when we cook chili beans or no beans ! I like the no beans

Our chilli is usually nice and thick, so we setup some bowls of diced up yellow onion, shredded cheese,( I like cheddar) ,some oyster crackers, and pull out the hot sauce so everyone can add what they like to their bowl just before eating. If the grandkids are here they also like to add some elbow macaroni for chilli mac !

I vote for Chili with beans, but then again I am from the north where we apparently make it wrong.
I've been told I make a really good chili. with bacon and roasted red pepper.
Crisp the bacon first, then save the grease and brown diced onions and garlic in it. Mix all of that in with the cooked ground beef, then add water, red kidney beans, tomato paste, chopped fresh tomatoes, a little bit of jalapeno, and a little bit of salt, black pepper, and ground red chili pepper. Let it simmer for a little bit, add the diced roasted pepper toward the end, then simmer again with the red peppers for another 10 minutes or so.
