Title: Beef Jerky
Post by: Bavarian on October 25, 2015, 09:18:30 AM
Hi there,

about a year ago i started making beef jerky.

Is there anybody who appreciates it as much as i do?  :)
If yes i'd like to share recipes. At the moment usually i make a marinade of Teriyaki sauce and Pepper.

I used to make it but haven't for a while.  Your recipe sounds similar to mine although I always added a lot of extra pepper after the marinade before putting it to heat.

Ah yes, i have to try that, too.

It might either save me pepper or the finished jerky has more of it on it.

Thanks!

If you are making it with a smoker another thing you can try is smoking salmon.  The process is exactly the same except the meat is cut  thicker and doesn't dry out to the same degree.  It's really good.

equal parts
Worcestershire sauce ( or soy sauce )
smoke flavor
franks hot sauce

add black and crush peppers..

I like too brush the marinade on the meat as it dries out
for a stronger flavor..

I'm using a regular dryer, so far i've used mostly beef and some tuna.

The latter though didn't turn out that good, but i blame it on my marinade.

Salmon sounds good, i have to give it a try!

And thanks Sspar for the recipe!

For my sauce i mix Soy sauce, Mirin and Sake in equal parts and boil it down to about half the amount.
