Title: What's for dessert?

Well we have a breakfast thread and a dinner thread, why not a dessert thread? Show off your desserts here! They don't have to be homemade, but that's definitely a bonus lol
tonight I made a pecan pie. I love pecan pie and I feel like it's very underrated, especially up north, the restaurants/bakeries around here don't make them unless it's thanksgiving! It's been a long time since I made one so I decided to give it a shot, I used the recipe from The Joy of Baking and it came out pretty good. I didn't burn the crust at all, which is something I usually worry about. the flavor of the crust was great, very buttery! It's a little on the tough side though, I think it got too warm when I was rolling it out, oh well.

Well Maddie, you did it now... I love Pecan Pie.
it's Sunday, my day off, and you have prompted me to make a pie or bake a cake today..... look out for a new reply with a picture soon!!!!
It's a very cold and snowy day so staying in and baking sounds like a good plan for me.

oooo yay! I can't wait to see what you come up with! I don't do pies too often, when I do it's usually Pecan or Cherry. or Peanut Butter, yummm! Last summer I did a cherry pie where I used Kolacky dough for the bottom crust and it was great, then I tried to do a crumb topping for it but it didn't come out right, I turned the broiler on for a minute and it kinda caramelized it a bit for a brulee topping and it was really good! Happy accident lol
I don't make cake much anymore either, but I used to make poke cakes a couple times a summer, those are fun to play around with. Usually when I bake anymore it's cookies

OK Maddie: I had frozen Blackberries iin the freezer so I decided to make a Blackberry Pie today. It just came out of the oven and the house smells so good. Waiting for it to cool a little so I can have a "warm out of the oven" piece of pie with a scoop or two of Ice Cream tonight.

So I'm not gunna post any pics because it's not pretty, like, at all lol, but I made a really tasty cake! I have a really good chocolate cake recipe that uses dr pepper in it. you can't taste the soda too much, it's more for texture, it makes for a really moist cake. Well instead of dr pepper I used cherry coke. I didn't stop there though, I decided to make it a poke cake. For those unfamiliar with poke cake, you take the cake and poke a bunch of holes in it and then you boil some water and make jello, and instead of letting the jello set you just pour it over the cake and then chill it. so I did this with cherry jello. usually poke cakes are just topped with whipped cream but I wanted to do a frosting. I didn't feel like doing one from scratch so I bought a can of vanilla frosting and doctored it up. I mixed a little cherry coke in and a little cherry juice, and also a packet of cherry kool aid mix. it came out tasting fine, but it's very pink and it looks very ugly sittin on a brown cake lol. very yummy though!

I am going to a wedding shower for a good friend on Friday night and I am bringing Biscotti...
....so last night I was busy in my kitchen. I am taking half of what I made to the party and putting the other half in the freezer for another time.

I darkened it a little... when I went for my makeover a couple weeks ago they lightened it way too much for my taste. I am a natural dishwater blonde but they made it more of a platinum... now I think I darkened too much... I sometimes change my hair color more often than I paint my nails...

Oh, I love cheesecake! The one and only time I met my paternal grandmother was back in 1961 when she came out to California to help after my mom had my baby brother. My grandmother made cheesecake and I seriously don't think I've ever tasted any that was as good as the one she made. Of course I was only 8 so who knows.

I have been known to eat some fresh, raw blueberries in a bowl of cold cereal and with some hot oatmeal and brown sugar.
I like them in muffins but I gather that they get cooked by the time you eat them!

@ Chrissy: YES, indeed, fresh (raw) Blueberries on hot or cold cereal or in a smoothie and in a bowl of ice cream or yogurt are mighty fine!!!!
.... yes, they are cooked in other goods like pie, muffins, pancakes, waffles, scones, cobblers, etc... but they are still very yummy.

It's rough. I've tried to have a more laid back existence nowadays. I definitely have no interest in confrontations, drama and/or arguing - been there, done that.
As far as someone thinking or calling me a bitch? Well, at least I wasn't mis-gendered :)

I had ice cream tonight. There's only 2 places around here that do homemade ice cream, and one of them opened last weekend. Today was my first time there this year and maybe my last, they raised the prices by a lot and the oreo coffee ice cream was flavorless :(

Take them back and get a replacement or refund. They should honor your request. These things happen occasionally, they should understand.

Last night I made Fresh baked Scones with Roasted and chopped Pecans. Still warm out of the oven with a smear of butter...... oh, so very good... a piece to take to work in each of the next few mornings if they last that long and are not all gone.

Maddie: I also like doing that with coffee and graham crackers.
I usually always have some Biscotti that I many times make for special occasions put away in the freezer. With a nice hot cup of coffee I can grab a couple pieces out of the freezer and enjoy them dipping them in my coffee. Also works with Ginger Snaps that I make.
Then of course, the time tested Oreos and Milk is always a good plan.
Thanks for making me hungry.

@ Chrissy: Yes, ice cream is always a good dessert option.
My favorite is "Triple Chocolate" Chocolate ice cream with chocolate chunks and chocolate fudge ribbons....
...and for even more pleasure I add chocolate topping on it.
Great for my times of wanting a chocolate overload, which is most days!!

I made a pavlova for the BBQ last night. It had a layer of fluffy meringues, a layer lemon custard, a scattering of fresh raspberries and topped with whipped cream, more raspberries, white chocolate and candied orange peel. I'm gutted I didn't take a photo to upload. I'm more gutted it didn't survey be the journey and became an Eton mess! :( Tasted good but it lost its ooommpphh xx

I made cupcakes yesterday!

I did a vanilla batter from scratch and it came out pretty good but nothing too special. I also made a lemon frosting from scratch and that was yummy but a little too tart, oops. For the strawberry filling I bought a can of pie filling and it was really bland so I ended up mixing a little bit of my mom's homemade jam in with it, which definitely helped.
I also made a few marble cupcakes that I'm going to stuff with vanilla pudding and I'm going to make a homemade whipped cream frosting, I hope they turn out good!

So last night we had a surprise party for a friend, and she loves pie, so I made her some! I made strawberry rhubarb and cherry. I cut corners on the cherry, I did make the dough but I used a canned filling that I added some pineapple juice to. I wanna try doing the filling from scratch next time, I've never done that before with cherry. I did make the filling from scratch though on the strawberry rhubarb, and it was amazing!! I've never made one of those pies before, must have been beginners luck! Everyone loved them, I got a lot of compliments!
