So I've been on hrt for 10 days, and I have an appointment on the 23rd at a sperm banking facility. Since I just started HRT, I thought my sperm count would be fine. I'm still ejaculating normally and it is still looking normal, but I today I was reading stories about transwomen becoming sterile after a few days. So now I'm freaking out a little. I'm most positive my sperm count will return if I stop HRT. But at the same time if I stop HRT momentarily I'll probably go in panic mode. Will I be okay to keep on taking hormones for another 8 days. Or it's best to stop until the 23rd?

When I had mine frozen the doctor I met with explained sperm is produced 72 days in advance. In other words, roughly that number of days before HRT will impact sperm production.

Personally I don't think 10 days will have an impact but you may want to stop until this is done.
You could check if the sperm bank can do a quality assessment (usually looking through a microscope is what they do). I had mine checked before freezing just to make sure they are OK.

I wouldn't worry about stopping HRT. Furthermore, the embryologist will tell you if the sperm are viable or not. So don't worry!
