Title: Have you tried pickled pig feet or fried pork rinds?
Post by: ChrissyRyan on May 11, 2025, 01:14:48 AM
Have you tried pickled pig feet or fried pork rinds?  Which ones?

This does not sound appealing to me.  Apperently some people really like to eat them.

Picked or pickled?  ;D

Yes, I've had trotters, not a big fan of them. Pork rinds are okay, but I wouldn't buy a bag just to have them.

Pickled.  I would rather have some pickled cucumbers.

Pork rind aka pork scratchings had them many times.
I won't eat pigs trotters!

I would think the rinds would be more palatable than the feet.

Incidentally, you see chicken legs for sale.  But chicken feet also for sale, especially so overseas or in USA based "international food markets."  I think they are orange, unsure if they are dyed orange or not as I do not see live chickens very often.

Yeah I've had pig trotters and even pig cheeks and ears. Yum. But then I am very weird.

What you folks in the US call pork rinds are not the same as what we call pork scratchings. Pork rinds are very sanitized, fluffy, Disney versions. Pork scratchings are actual pig skin, sometimes with the hair left on. They can break your teeth. I have no idea what they do to pork rinds to make them seem like something out of a candy store but it's very weird. I've had those too, and I admit I like them, but they are not as intense in terms of flavour.

I've had pork rinds. They are deep-fried to make them light and crispy. They are okay, not great. They sell them in grocery stores where you find potato chips, and some are hot and spicy.

We raised a few pigs, so that was my first experience with Rocky Mountain Oysters (https://en.wikipedia.org/wiki/Rocky_Mountain_oysters). Most are usually made from beef, but these came from the pigs. I know because I cut them out with help from my step-dad. My mom sliced them and rolled them in cornmeal, then fried them in a pan. I was EXTREMELY hesitant to try them, but found them to be delicious.

Pork rinds are made by cleaning then boiling pig skin (often from the back and belly) to soften it, then drying it to remove moisture, then frying it in hot oil until it puffs up.

No, I try to avoid digestive tracts. So never had tripe either. I did try pickled pig's feet, but once was enough. The meat was not bad, it was the pickling that I didn't care for.

Tripe was a big thing back in world war 2. When rationing was a thing in the UK. My grandparents swore by it, as well as beef dripping.

I have tried both. I really like the dripping. It's basically just a salty beef fat spread. It's not something you want to eat in copius amounts but it's really nice in small doses. Especially on a crumpet. YUM!!

Tripe is basically offal. Like liver or kidneys. Nothing was wasted back then. It's nice deep fried.

No the US version is different. In the UK they're called Pork Scratchings. You can still get Pork Rinds but they're not the same thing.

If you want the best pork scratchings... cook a joint of pork for a Sunday roast. You get a big layer of fat on the outside, usually. In the UK we call it "Crackling". And getting it to be succulent and moreish is kind of an artform.

What you do is take a very sharp knife, and score it width and lengthwise. So that when you cook the meat, the fat hardens into little squares. But that's only the tip of the iceberg. Get some himalayan rock salt, and some good quality olive oil. Rub the oil into the skin of the joint. Like you're a masseuse in training. Really work it in there. Then liberally apply the rock salt, making sure to get into all the cuts you made.

Cook the pork joint under a medium-medium high heat, under foil, in your oven/air fryer until it's almost done. Then whip the foil off, turn the heat right up and blast the coating for a good half hour. Getting that fat layer as excited as Donald Trump on the golf course. It will crisp up something amazing. No hole-in-ones, though :P

But you can take a sharp knife and remove the crackling from the joint. To enjoy at your leisure. Better than any processed stuff you can get in a packet.

I have had pig cheeks before. Being from the UK, there's kind of a remnant of WW2 rationing and making do when food was scarce. You can learn to... if not enjoy... tolerate stuff. And I grew up in a very poor family. Up North. Where food was sometimes a luxury. I ate my pet rabbit during the miner's strike in the 80's. So... yeah, don't write anything off. If you aren't hungry, then it's a bit of a luxury. :)

All bacon is pork, Chrissy. Kind of goes with the animal ;D Unless you're vegetarian... then bacon becomes some weird substitute which never quite hits the spot. Because... it's one thing you can't really replicate. :P

I haven't had pig cheek before, that I remember, but I have had beef cheek and tongue. It makes for some delicious barbacoa if done right. Mexican cuisine uses the whole animal and even now that hasn't changed much.

I tried that. No... just no. My best friend is vegan. And she's always craving bacon. Comes up with all these weird and wonderful concoctions that are supposed to taste like it but... just don't. Turkey bacon is what happens when you take the masking tape off your walls after you've just finished painting and think "Mmmmm... I need lunch!"

Food illusionists can work miracles these days, but they can't beat nature. I want a 100% genuine steak, running free with myoglobin, cooked by a master. Not some facsimile by people in a lab thinking they know how to make artificial biomass taste even remotely the same. This is why carnivores literally exist. It's a thing. Has been since the dawn of time. :P

Holy wow! I'm just getting caught up in this thread, what a discussion!  :)

I'll offer up some pearls of wisdom...not something I'm accused of every day of the week.  ;D

We watched a video, I don't remember what it was called but "Will it bacon?" would probably find it. The guy's bacon collection would reduce Noah to tears.

The supermarket here sells precooked pork knuckles in a two pack; one for now and one for later. It's delicious.

Guanciale is the cured cheek of a pig. It's traditionally used in carbonara. Also delicious.

Hugs, Devlyn

I have had this!

As a kid, I helped my stepdad butcher a hog. He called it "jowl bacon," but we cooked it like any other bacon. I didn't notice any difference in taste; it just seemed to be more fat than meat, so maybe that is why I wasn't as impressed as he was with it.

Growing up we slaughtered 2 old sows every fall. Feeder pigs were for market. Fat was all cubed and cooked down. Liquid was cooked off and squeezed.  Leftovers were cracklins. Liquid fat solidified when it cooled and the tubs of it would go in the root celler. It went into bread, cookies, piedough,.. ears and skin were fried in the fat which made a good treat. Feet and knuckles would get canned. Thankfully no head cheese..I worked hard so none of the weight stuck on me. I was 5 10 in high school and had a 24 inch waist. I am trying to get back to that LOL.

Thanks for the subject, it prompted some reminiscing.

Love,
Leigh

LOL, I love those guys! Their food videos are quite awesome. I watched their Carolina Reaper video and yeah... got hooked. I am not a big spice head. My best friend is Colombian and has an asbestos, NASA heatshield tongue. I am a Brit. so that just isn't cricket. But I know all about making the most of what you have.

Dev is a someone after my own heart. People have been eating this stuff for literally thousands of years. It's only bloggers and influencers who tell you that you shouldn't because clickbait.

Some of the fanciest restaurants in London will literally sell you a whole cod's head, eyes and all. For exorbitant prices... but the point is.. meat is meat!

Yeah here in the States y'all are known for beans on toast, which to be completely honest sounds disgusting, no offense.

I remember the first time I heard about a Southern U.S. favorite: Chicken and Waffles.
(I just threw up a little bit.) ;D

I don't like that either tbh. I would rather have brisket tacos than chicken and waffles any day.

None taken. Don't knock it till you've tried it, is all I'll say. ;D I do a mean beans on toast. Thick farmhouse loaf, baked beans, scrambled eggs, gently fried mushrooms, couple of rashers of bacon, some relish on top. You don't just dump a lot of beans on store bought bread, haha. I mean you can, and some people swear by it. But to be fair... British baked beans are a cut above. ;)

To people in the UK... biscuits and gravy consist of this:

combined with this:

Which is decidedly nasty. ;D

Yeah, y'all's biscuits and gravy are an entirely different thing than southern biscuits and gravy.

There is a waffle restaurant that does that just a few miles away from  me.  I should go there again, it tastes good.

There is a gas station chain that sells Buc-ee's Beaver Nuggets.  But I do not think they have any pork in them.

So they differ from pork rinds.  However, they are a snack, with corn and brown sugar and more in them.

Popeye's Chicken was doing that. I don't know if they still offer it.

Ok, how is Buc-ee's? I have a decently new one and hour away in Amarillo, but I just can't justify going to a gas station with overpriced everything.

I think they took that off the menu a few years ago, but people still buy the chicken and make their own waffles. They're not as thick as the ones from Popeye's, but it works if you're in a bind

Popeye's chicken can be awesome, sandwiches or breast strips.
Unsure about chicken nuggets.  You will have to try those.

About Buc-Cee's:

The Beaver Nuggets are okay, not bad, I would not go out of the way to buy any.

Their brisket sandwiches though are the bomb.  Really good,  I think they have two sizes.
Seems like a lot for a sandwich, but it is a very good sandwich.  Arrive with an empty stomach.

Their bathrooms are very, very clean and have lots of stalls.  They may have 100 fuel pumps outside too.

I think they are located in at least Missouri; Berthoud, Colorado;
Florida, KY, Georgia, SC, Tennessee, Alabama, and there are lots of them in Texas.

The one in Colorado is always busy. I was going to stop there for a rest break while moving, but the line was so long, and cars were stopped on the exit ramp. No, thank you.

There is a lot of discussion here about building another one in Palmer Lake, between Denver and Colorado Springs. A lot of people do not want it. The mayor of Palmer Lake, Glant Havenar, resigned in June after months of community debate over Buc-ee's. A lawsuit claims the mayor violated state laws and called people who oppose the deal "----- losers" and "terrorists". Gotta love politics.  ;D

Some fuel chains seem to have their fans.

Out east, I heard there is a private chain called WaWa that makes some people go GaGa.
These are not giant fuel stations.  I may have been in one once.

Seven Eleven seems to be another big fuel chain and they are known for their Big Gulp large drinks.

I would not stop there if the line was ever that long.  Silly to do so.

Have you tried pickled pig feet or fried pork rinds?  Which ones?

Apparently some people really like to eat them.

Jeez, didn't know a gas station was such a wild topic

Environmentalists don't want more gas stations. Citizens don't want "tourist traps" cluttering up the mountain scenery. Politicians want the tax revenue for the city.

Ah. I guess being in a small town really does mess up your perception of big cities. I don't go into cities unless I absolutely need something that I can't get here and even then I go into another town that has a Walmart

Politicians find a way to spend new sources of tax revenue.
Usually this does not include the new tax source being used to offset and lower the existing sources of tax revenue.
They spend more. In some cases increased spending is needed no matter how good they were at fiscal management.
