As I'm slowly packing up and getting ready to move, I find myself wondering if I still need my old identity documents. it's been a few years... should i hang onto them?

Better safe than sorry.
I would put them in a safe place, just in case.

Like I said, i've been hanging onto them for 2.5 yrs already... and I'm not opposed to sticking them in a drawer in my new place, but... how long is long enough?

depends on the documents, if you think you could be audited by the IRS, then you'll want to hang on to them for 5 years (I believe).
if you want to be thorough, as long as 7 years for financial records (bill stubs, loan docs etc...).
