Title: Salad Much?

My optometrist recommended that I eat more vegetables, strange what they can tell from an eye exam

So I'm wondering who's into salads? What kind do you like to make?

Do you have any good recipes to share?

Tuna, hard boiled eggs, onion, mayo, cheese, dill relish.  Oh wait, veggie salads...  I have been known to enjoy mixing tuna, chicken, or egg salad into an actual salad.  It makes a mess but it's tasty.

I go for the fru fru salad mixes instead of the plain old iceberg lettuce.  I tend to toss in things like some feta cheese, artichoke hearts, dried cranberries, onion, and sun dried tomatoes.

The thing to do is just have fun with it.  If it's an ingredient that you like, toss it in a salad and give it a whirl.

The variations on salad are endless. I love salad and eat it at least once a day. I put all kinds of things in salad. I have never used recipes for salad, its just a matter of what you like. I use lettuce, spinach, cabbage and kale as the base. I don't like huge pieces so I shred the lettuce and spinach and use small pieces of kale. A buy a bag of shredded cabbage like people use to make Cole slaw. I like the crunch.

Other stuff I use in salads are:

Tomatoes.
Radishes.
Cucumber.
Onion.
Broccoli.
Cauliflower.
Celery.
Bell peppers.
Mushrooms.
Bean sprouts.
Zucchini.
Squash.
Egg plant.
Chopped pickles.
Sliced banana peppers.
Sliced jalapeƱo peppers.
Tiny ears of corn.
Carrots.


In lunch salads you can add any of the following:
Chopped boiled eggs.
Shredded or chunks of cheese.
Chicken.
Tuna.
Anchovies.
Chopped bacon.
Ham cubes.
Turkey.
Sunflower seeds. "Shelled)
Roasted garbanzo beans.
Avacodo.
Roasted pine nuts.
Olives. Both green and black.

That's just some of the stuff you can use in a salad.

Julia's list is pretty complete however I keep canned kidney and pinto beans around for salads as well. Drain the beans and eat them cold as a protein. You could cook your beans from dry beans however make sure you properly cook kidney beans as they might be poisonous if cooked in a slow cooker.

Since I'm doing keto, I make sure I get some sort of fiber and greens. Red leaf or Romaine lettuce, Roma tomato, some cucumber and sometimes a title green bell. Feta cheese and sometimes shrimp or chicken over it. No real dressing other than lemon and/or lime juice . I also put 3oz of coleslaw mix and 4oz of celery in a ziplock with dill pickle juice and sriracha as a side for lunch.

I like to make strawberry poppyseed salads with some grilled chicken on top. Simple, but so good!

-Romaine lettuce
-Baby spinach
-Strawberries (cut to be bite-sized)
-Feta crumbles (blue cheese is good too, but not everyone will agree with me on this)
-Chopped pecans
-Grilled chicken
-Poppyseed dressing

If poppyseed isn't your thing, honey mustard is a good substitute.

my daily lunch is a salad.

Lettuce
Cauliflower
Shredded Carrots
Broccoli
Cabbage
Asparagus
Ground Flax seed
w/ Newman's Olive Oil / Vinegar dressing

I tried adding bell peppers .. Let's just say that the cramps and gas expellation(sp) got them removed in a hurry!

That strawberry salad sounds great.  Berries in general are usually a welcome addition to salads for me.

Wow, interesting topic!

Over the past week or so I've developed a craving for salads.  Usually buy pre-mades at the store but as of late have been having what I call salad sandwiches which is the salad with schroons, cheese, salt, pepper and mayo.  Can't seem to get enough of it.

Back in the early 60's there was a japanese movie about people stranded on an island and they were starving.  The Island had all sorts of mushrooms but if you ate them you turned into one.

Oh my, I'm turning into a veggie.

I eat a giant salad nearly every day. 

Iceberg lettuce
Spinach
Onions
Tomato
Sweet peppers
Avocado
Roasted sunflower seeds
Chia Seeds
Ground flax seeds
Shredded cheese
1/4 cup of salad dressing

Sometimes I might also add
Black olives
Garlic
Boiled eggs
Chopped meat

  I use balsamic vinegar and olive oil in about equal parts with fresh ground pepper and salt as a dressing. I just pour some oil, then some balsamic vinegar and add salt and pepper to taste.

  Salads are usually made with romaine lettuce, maybe a red or green leaf lettuce, rainbow bell pepper slices, yellow onion,green onion, radish, broccoli, cauliflower (if I have them), shaved carrot, tomato, some sort of meat ham, bacon, chicken, steak (whatever is in the fridge leftover) ad dressing and then cheese (again whatever is in the fridge usually cheddar but could be pepper jack, provolone, or another.

A girl I work with decided she wanted to lose some weight so she started having only salads for lunch. After a few days she said she had actually gained a couple of pounds and she couldn't figure out why. Yes she did in fact eat salad every day but in her salad she put a couple of boiled eggs, lots of chicken and bacon, what looked like a couple of cups of shredded cheese and then she drowned the whole thing in Bacon/ranch dressing. And she wondered why she was gaining weight! I told her she needed to stop putting all that stuff in her salad if she wanted to lose weight and she said she couldn't,  that she needed all that stuff to cover the taste of the vegetables.  Lol

My boyfriend can eat a whole bottle of ranch if he has enough hot wings.

I'm getting ready to have a salad sandwich but I do use Bleu Cheese all the time.  Some are good and some not so good as far as taste for me.  But I prefer it over all the others.

I love a really good Caesar. As simple as can be: Romaine, Croutons, Parmesan (real stuff, grated), and a good homemade dressing (most bottled Caesars are pretty bad honestly, Newmans is okay-ish). For an extra kick, some good white anchovies chopped up and tossed with it. I always eat it with grilled chicken or salmon, usually seasoned with this spicy italian blend (it's just garlic, red pepper, oregano, basil, and I think marjoram, found it on clearance at Walmart and loved it). Also, bacon jerky over regular bacon is a nice change, just chop up.

Raw vegetables define all salads. I just buy what looks good in the produce section of my local market.

When it comes to dressings, look at the calorie content, then decide how much to use. some of those dressings are very high in calories.

Note: my favorite condiment is Yellow Mustard. Zero calories and goes well with any salad with grilled chicken on top.

I have a backbone salad and add stuff that may be fresh at the time. I find I need some 'crunch' in a salad to let tummy know that mouth has done something.

Roughly chopped red cabbage, spring onions, rough chopped mushrooms, chopped walnuts, carrot and capsicum. I then, as I said, build on that with whatever is fresh at the market (slice of wombat, fricassee of koala etc).

I can also use this as the basis of a stir fry if I so desire.

I make enough for about 5 days at a time as making a salad from scratch each day is a little time consuming, if I have it ready to take some as needed it is more likely to get used up.

I never use dressings on a salad as I like them too much. They are a bit like whiskey for me, best left in the bottle ;D

I like basic leafy vegetable salads, such as spinach salad, standard house salad with lettuce and carrots, romaine lettuce is good too, especially so as a must in Caesar salad.

For other ingredients:  Love those tomatoes, the little cherry ones or sliced, many cheeses, dressings, and sometimes toppings like bacon bits.  Mushrooms and eggs on top can be yummy too.

The goat salad.

Spring mix and baby spinach for the leafy part.  Sun dried tomatoes, pine nuts, dried cranberries and goat cheese crumbles for the toppers.  Balsamic vinaigrette dressing.

I enjoy a spinach salad, Caeser's salad, and traditional "house" lettuce and tomato type of salad. 

I never cared for salads such as bean salads.

My favorite salads are Cole Slaw, Caesar Salad, Pasta Salad, and when I am really hungry for a salad, I make it my main dinner entree... a full size Chef's Salad with tomatoes, cukes, lettuce, bell pepper, black olives, green onion, and perhaps Avacado  (if I can get a fresh one up here where I live) and/or other things I can find in my fridge... then I top it off with freshly grated Parmesan cheese and my homemade Italian Garlic Dressing.   mmm, mmm.  good!

I forgot to post this picture last week.  I made a large Chef Salad for 2 of my friends and myself to share for lunch over the weekend.   
I put everything on it...  Romaine Lettuce, Tomatoes, Bell Pepper, Cucumber, Celery, Hard Boiled Egg, Sliced Mushrooms, Sliced Beets, Dill Pickles, and Black Olives.  We topped it with fresh grated Parmesan Cheese... and my homemade Italian dressing.

My mom told me I look like I've lost weight and she looked kinda shocked. Then an hour or two later she proceeds to tell me "I don't know what you're doing to yourself". Well geez, I guess my diet is working then?! Hehe

Any leaves but iceberg lettuce... bell peppers, celery and cucumber (which I don't like, but let's face it I'd rather be eating a bacon sandwich than a salad anyway, it's for the Greater Good), tomatoes, grated carrots, beetroot, olives, vinaigrette and pine nuts. Pine nuts all over everything.

Hadn't made a salad in awhile so last night I made a nice big salad with lettuce, green cabbage, kale, spinach, arugula, cucumber, onion, olives, crumbled bacon, a chopped ham slice, homemade croutons, crumbled gorgonzola, Kraft shredded Parmesan, Romano and Asiago cheeses mix topped with ranch dressing and ground black pepper and crushed red peppers - Oh, and a sprinkle of Grill Mates Chipotle seasoning mix

It was a nice break from my list of same ol' thing recipes and had just the right mix of Creamy, crunchy, hot, sweet and spicy  ;D
