Ive been reading through alot of post (old and new) and found a few post where guys say they have stopped taking T. My question is why did you stop? was it for medical or personal needs?
Once you have been on it and while and stop taking it, what side effects does that give you (eg. do you still shave your face? etc)
I have no intention of stopping it, but from what I understand, the irreversible changes are voice and facial hair. So you would have to keep shaving and would still have the deep voice.

I know one guy stopped taking it because he was starting to lose his hair and was happy with the changes T had given him so far... so he decided to stop.

so did he end up going completely bald? or once he stopped taking T, did the baldness come to a stand still?
He didn't get far enough for it to make him bald. Stopping T stopped the hair from falling out.
Meiko Xavier on YouTube has some really interesting vlogs about his transition and why he stopped taking T. As well as that, he's made some cool musicvideos of trans and genderqueer people :)
How passable are guys who've taken T and stopped? I didn't know that was even an option.
I think it depends on how long they were on T, their personal genetics and how much their body responded to testosterone. I think generally, you'll end up like someone who is MtF and has just started on Estrogen.
