I love the work of Ennio Morricone and listen to it all the time. I'm also found of Erich Wolfgang Korngold, whose score for Robin Hood is near perfect, and Bernard Herrmann is in a class by himself.

Yeah everyone's into Psycho, and no doubt its a masterpiece of film scoring, the way the strings carry both the tension and the dream quality of the film - I just love it. But I also like the Devil and Danial Webster, Vertigo, Marnie (I just love Marnie period) and like Taxi Driver may well be one of the best film scores ever.
I love Ry Cooder's score for Paris Texas
Walter/Wendy Carlos did a good job on Clockwork Orange too, very ahead of its time.

Anyway, I like Yoko Shimomura & Takeharu Ishimoto for video game composers. There's some movie composers I like, but I don't know their names.
I, too, like Danny Elfman and Nobou Uematsu. I'd also add Hans Zimmer, Koji Kondo, and Alan Menken to that list. About 97% of the music I listen to is movie soundtracks, video game soundtracks, or Broadway Cast Recordings.
I am not much into composers or their name. But Directors I like are:

M. Night Shyamalan

A.R. Rahman
Morricone
Yoko Kanno (Cowboy Bebop/Escaflowne/Wolf's Rain/etc)
Yuki Kajiura (Tsubasa Chronicle/all the .hack series)
Kanno has a HUGE range and her music is absolutely beautiful. She ranges from jazz to your standard orchestral music. Those three shows I listed have unbelievable music.
Kajiura has a really ambient style. Again, beautiful and it just makes me happy to hear it.
I also love the music from the Miyazaki films. I've gotten into a lot of really great Japanese music from anime. There's some great pop/rock music too. My roommate's uncle works for Danny Elfman...he was in Oingo Boingo. ;)
Wait wait wait... how can a serious discussion about video game composers occur and no one bring up Yasunori Mitsuda (Chrono Trigger, Chrono Cross, Xenogears, Xenosaga 1, and others). He is only the best that ever lived.
He no longer does video game music - he just does his own stuff now, but gosh was he amazing.
I loved the way Neil Young scored the Jim Jarmusch film "Dead Man".
I also like the work of Popol Vuh, who composed the soundtrack for Werner Herzog's "Aguirre, der Zorn Gottes" ("Aguirre: The Wrath of God").

Ry Cooder deserves mentioning in this thread also.
Danny Elfman and Vangelis are the two who leap to mind right now.
