You know the type of sandwich...someone asks you what's in it and you reel of a list of ingredients that makes them go eeeeeew. However, as far as you are concerned, eating it is like receiving sandwich shaped mana from the deity of your choice.

Currently rocking my world is the winning combo of vegemite, cheddar, pine nuts, rocket and toasted seaseme oil for a dressing. Maybe not to wild and alternative, but very tasty.

Bananas and refritos on rye toast
Meatloaf, mayonnaise, peanut butter on white bread.
Fried banana, peanut butter .. grilled.

I don't have any weird sandwich fillings really. I usually just have pepperoni, ham and cheese.
1. Peanut Butter & Vegemite on rye bread.
2. Mayonaise, cheeese & banana's in white bread.
3. A slice of Lemon, diced onions, and mackerel in brown bread.
1 and 2 I could definitely see working...in fact number 3 sounds quite epic. 2 I'm not sure about...but I can hardly talk, I used to eat Soreen malt loaf with primula squeezy cheese. hehe

This works better on wraps than sandwiches, since tortillas don't get soggy as easily as bread, but: Chicken, lettuce, onions, mandarin oranges, apples, and poppy seed dressing is my new favorite combination EVER.
Om nom nom, fruit in my chicken wrap. 8D (I suspect it would also be good with pineapples or grapes mixed in, or with some cole slaw, or with those dried chow mein noodle things-- but I haven't had the opportunity to try any of these variations yet. I will as soon as I get the chance.)
Spinach, broccoli, brussel sprouts, and worcestershire sauce stewed, mashed, and reduced to a paste. Spread it thickly on bread with provolone cheese and grill it.

BTW Swiss cheese on rye with sliced onion and fruit cocktail in a tortilla shell is tasting sorta good.
