Lunch Ideas?

I'm not much of a chef, but I was hoping some of you more culinary inclined could give me some suggestions.
I need ideas for lunches that are healthy, don't involve peanut butter, are relatively clean, easy to pack, and cheap to make. I'd prefer it if they don't involve bread since I suspect we eat too much of it and if they contain fruits and/or veggies because I suspect we don't eat enough of those.
They're for both me and my son to take to school. We're getting kind of sick of sandwiches and I'm trying to eat healthier.

Chop up some fresh veggies and pack some light or no-fat ranch dressing as a dipping sauce. 

Veggies I chop up:
Broccoli
Cauliflower
Peppers (red / green / orange)
Celery
Carrots

Also, some mixed nuts would compliment well.  If you buy them premixed, make sure to keep the salt low and the portions small.  I make my own nut mix from scratch, spice it up with cayenne pepper and divide it into 1/4 cup portions for a snack at work.

Got this recipe from allrecipes and it was a sure delight to paleo fab like me. Here's the quick recipe:

Ingredients
- 2 cups long grain white rice
- 4 cups water
- 1 head romaine lettuce, chopped
- 1 large carrot, grated
- 1 (7 ounce) can albacore tuna in water, drained and flaked
- 3 tablespoons olive oil
- 4 tablespoons balsamic vinegar
- 1/4 teaspoon salt, or to taste
- 1/4 teaspoon ground black pepper, or to taste


Step 1: Combine the rice and water in a saucepan, and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and the water has been absorbed.

Step 2: In a medium bowl, toss together the romainee lettuce, carrot, and tuna. Pour the olive oil and vinegar over this mixture, and season with salt and pepper. Toss to coat. When the rice is done, cool for about 5 minutes, then toss with the salad. The warm rice will wilt the romaine lettuce slightly. Taste and adjust the amounts of vinegar and oil or salt and pepper if desired. Serve immediately. This does not keep well.

A salad is very easy and cheap and you can make it interesting if you load it up. I do a mix of spinach and kale then I throw in cherry tomatoes, cucumber, radish, black beans, red pepper or onions, sunflower seed or walnuts some time a few slices of avocado then like a vinegar based dressing.
