Have you eaten Kansas City Burnt Ends?

These are made with the smoked burnt end of briskets.

So long as they aren't to dry. I do brisket from time to time. The better tasting parts are from the middle.

I tried them there in January for the first time. They were amazing, but then I always did like the crispy end of roast beef.

The burnt ends are what are tasted on bbq contests.
Those across the pond that tub in your backyard that you put charcoal in and put meat over is not a BBQ. It id a grill. A BBQ is done over indirect heat. No insult intended, but words matter.

Haha, no offence taken. We do not really do barbeque in the UK. I know it is a massively serious thing in the US. Kind of like Japanese Fugu chefs. You can devote your whole life to being a grill master. In the UK, a barbecue is what you wheel out during the one rain-free week of summer, and hope beyond hope that no one gets food poisoning. The US is way more serious and dedicated to the art of cooking meat.

I try. I make some mean pork ribs. Tamed me about 6 hours of cooking.
I use real wood not a pellet smoker

It is interesting that good burnt ends can be sought after because anything burnt does not initially sound appealing.
