Have you bought meat in bulk frozen or to be frozen?

Have you bought meat in bulk frozen or to be frozen?

Such as half a steer or a sizable meat assortment of steaks, ribs, ground beef, stew meat, etc. bound for your home freezer.

How did this work out?  Did you use the oldest stuff first or did the oldest stuff get buried and lost, bound to get tossed out when it was found?!!!

I am unsure if I would ever do this type of purchase for a number of reasons.  I have heard of good results and of bad results of doing this.

I ordered a quarter, 1/4, organic pig in the past and kept it frozen until use. It was shipped frozen and arrived fine. I hadn't had organic pork before and my son and I were shocked at how good it was. I've had organic beef and chicken, but the contrast was not obvious as it was with pork. It's been a few years since I've done this as I still have long covid issues with tasting things so I tend to go blander/cheaper offerings now-a-days for cost. The experience was very positive, but pricy. I don't recall the company or the pricing. 💚

Buying moose from a friend that hunts. Can be up to 30-40 kg depending on how much he has and how many customers he has. It is very lean and can easily sit for two years in the freezer. Fattier meats, like pork, will only last about 6-12 months since the fat will slowly go sour-ish.
Btw, 30-40 kg moose is about one sixth or even less of a grown animal. They are big.

I have never eaten moose, elk, goose, opossum, wild birds, and I think not duck.
Who knows what meat might have been in some foreign dishes!

I have eaten some deer and an occasional bison burger.

I have never frozen any meat except for ground beef (and some rolls of breakfast sausage) and that is just the ordinary organic one pound packages from a typical grocery.  I have frozen things made with meat, such as chili.

Moose is an excellent meat. Lean and with a smooth wild/game taste. We don't have Elk (Wapiti) here.
Reindeer is also very nice but has more of the wild/game taste.
Wood grouse and Black grouse are excellent, but needs a bit of finesse with the cooking.
And the list goes on...

Never bought in bulk as I don't have the freezer space but i often freeze raw meat. There is no reason not to. I have a pork tenderloin 1 lb of best stewing steak, 2 bags of jumbo prawns a pack of tuna steaks and two sea bass in there at the minute.

I'm open to trying most meats and fish to be honest. I've had beef, lamb, pork, chicken, Ostrich, turkey, venison, boar, rabbit, pheasant, and wood pigeon. Fish wise I've tried Tuna, shark,Swordfish, monkfish, cod, mackeral, haddock, pollock, Salmon, Trout, Basa, lemon sole, plaice, Sardines I'm sure there are more.

When does "freezer burn" start for steaks in the freezer?

How much free air space is there in pakaging and how often do you open the freezer. I have two fridges and two upright freezers. One freezer is my deep freeze one which doesn't get opened very often which cuts down on burn. 💚

As already said, it depends on packaging and on how often you open the door.
I vac the pieces that are likely to be sitting for a while in the freezer. Then they dont freeze-burn (at all) since there's no "free air" in the packages.

I don't know if this counts but during covid meat was hard to buy so I order a bunch of meat from Omaha Steaks. That held my over until meat was back in stock at the grocery stores.

For those not in the US: Omaha Steaks is a online meat company, mostly used to send gifts.
