Last night I had a spinach salad.

Tonight I enjoyed a grilled Swiss Cheese sandwich on artisan bread (the good stuff!)

Made a Lincolnshire sausage casserole with red pepper, shallots and brown mushrooms. Will have it with a baked potato tonight and the rest another night.

Pancetta and mushroom pasta with a fresh green pesto sauce. Might make a pork, cider and apple casserole too for later in the week.
