No cauliflower as it's too hard to grow. But I've ordered some seeds ready to do this year in my garden.
Sweetcorn. I'll start these between wet tissue in a tub as that's the only way I've got them to work. As soon as they sprout then straight into pots. Don't leave in wet too long or they'll go moldy. Once planted outside they're just thirsty. I always water each few days but let it pool deeply around the plants. Home grown corn straight from the plant is just the sweetest.
Courgette. Easy to grow and matures fast. Just two or three plants will deliver a ridiculous amount of Courgettes. Getting one a day per plant is not unknown!
Runner beans. Literally the easiest veg to grow. Will get huge and deliver beans as long as you harvest them. Leave a day too long though they'll get big and stringy. Needs a lot of room to climb.
I'm not ready to tackle much more yet, but once my depression is under control maybe I'll get more underway next year.
