I would see if you could get a doctor's letter - on actual letterhead (with contact info, etc.) stating you are being treated for a hormonal disorder or condition & listing your true name and birthdate (as indicated on the id).
Then if a clerk gave you had a hard time, you could say as matter of fact as possible, "Yes, I realize I look young. It's because I have a medical condition/hormone deficiency/etc. I have a letter if you need proof."
Most won't want to see the document, some will apologize and feel crappy for making a big deal about your medical issue, and, while some might be skeptical (which is why you actually need a document), most, in general, will realize that there could be serious legal problems if they refuse you service on account of something that is a medical condition.
My best guess is that this will actually work better once your ID says M/name change, because there is definitely an element of male privilege in customer service, where making a guy who has a hormonal disorder feel like crap for looking less like an adult man isn't cool, way more than people care about putting out someone who seems like a young woman & has an F to match. But there is no reason it shouldn't work with the F either.
