If you're post op, and he's already seen your face, what in the world are you worrying about?  If he already knows, he clearly doesn't mind.  I personally wouldn't bother driving the point home; It can very quickly become the crux of any relationship (or conversation, which is as terrible a loss).  And while I wouldn't for the life of me sleep with such a man (much less a bodybuilder), I'd go for in an instant.

But he's very uncomfortble talking about it because it makes him (far) (too) aware about who's he (really) involved with.

Just thinking outside the box... Might almost be something like autism, which can create a barrier between hearing and understanding things. As in, he may know and remember the conversation, but may not really 'get it'... I don't know.

No, most 'straight' men are simply ambigous considering MTF.

They know and they are interested, as long as you simply don't mention it at all.

Giving their interest a name is simply too confronting for them....besides that: they can't make excuses like 'but I didn't know' after sex...after which you won't hear anything from them anymore until their 'interest' is playing parts after weeks/months/years.

If it were me, I'd pass that date by and move on. It sounds to me like all he wants is sex anyway. Now if that what your looking for, then go for it. Myself I'd kick him to the curb... I think I'd go with the guy you actually had a date with he seems very sweet and kind. Also it sounds like you two hit it off very well together. Shisha guy just texted me and said he would like to get together again next weekend. Then he said that he saw me outside this morning and I was like omg he saw me with bodybuilding guy lol. I'm free to do what I want but it would have been a little awkward. Turned out that he saw me on my way home after I walked bodybuilding guy to the subway station. And he doesn't even live close to where I live. Thennn he said that his uncle's daughter is visiting him this week and that she'll stay for a couple of days. Thennnnnn he more or less said that he was planning on f*kcing her and that he's done that 5 times before. Okayyyyyy. Tmi. And he told me that because?? He's free to do what he wants. Exit. Lol.

I think people who've had experience or read about trans issue might be able to identify the lubrication / tightness issues. Though as I've gotten older many women my age have had lubrication issues too so that no longer seems to be a question I field. The tightness people do wonder about since I'm 38 and they expect it to be looser...
