There are two major things, well three, that can vary, but bleached/unbleached only affects color. The fineness and the gluten content have a big effect on how something can come out. There's nothing to be done about fineness, but if you start with a flour with lower gluten content you can adjust,... If you can find gluten. Today I found it at my local supermarket which is going to have a big impact on my breads and pizza doughs going forward. It's a small thing, but baking is a craft that makes me happy. I made almond cookies tonight.
