There Doesn't Seem To Be A Clear Path...

Whenever I ask people about hormones, there doesn't seem to be any standard....for example, there doesn't seem to be a legal limit on age, or any requirements besides "being transgender" which I think is a little hard to 'prove'? I'm fourteen and a trans man and as someone who is fixated on routine and 'steps' I'm confused and slightly upset that it just 'depends', because that seems to be the answer that I always get. "Do I need to be a certain age?" Depends. "How will the doctors evaluate me?" Depends. "What method is fastest?" Depends. Is there anything at all about hrt that's certain? Or at least likely?

A reputable gender therapist should follow WPATH. So they can't say you're definitely transgender but they can say you show you have GD and agree you'd benefit from hormones.  It's also their job to rule out mental illnesses which may make you feel trans and to see if you've thought transitioning through thoroughly and seem mature enough to continue. You need to be 16 I believe for HRT although you probably need parents permission. You can receive blockers younger than that though. If you live in America you can go to planned parenthood and receive HRT through informed consent.

I understand the frustration. I just wanted my therapist to say I'm definitely trans to put my mind at ease bcos I was constantly doubting myself. But considering how in the past a trans person had to fulfill gender stereotypes and fulfill a 'standard' trans narrative it's a huge improvement.

The reason you can't just go to a drug store and buy what you need is because you  need a skilled professional to monitor the differences between people. Some people may be ready  for hormones early  while others need to be sure they can handle the changes hormones will make in them. Dosages can be greatly  different because peoples bodies don't  handle hormones the same way. Even your response to hormones may be different and you  can see examples of that in the CIS population.

You are attempting to make something that is complex simple and it's not possible. If you want, you can learn about each phase of the treatment and you will come to understand why there is nothing simple about our treatment. I have many of the answers but I started treatment in 1973 so I have had plenty of time to learn. In addition, the last year and a half I have been on the site have added to what I already know. Your are young and and blockers would be a good start however it will take time before you will be ready for hormones. Sit back and enjoy the ride because you will only see it once.
