I'm a keen baker myself,  but a lazy cook. A meal often involves piercing with a fork,  and the ping of a microwave.

I cooked a midnight breakfast for my wife and me last night. Nothing fancy. An Asiago cheese omelet, cherry wood smoked bacon and grits with butter. I burned the toast, so no jelly.  :( Yes, I'm a Southerner and like grits.  :)

Tommy, I love my grits also.  Is that a clemson shirt on?  If it is maybe I need to send you a Gamecock shirt?....LOL  I made homemade biscuits the other day, best I ever made.  Did not use self rising flower, all purpose and baking powder.  Cooked in cast Iron pan in oven.

  Good morning folks,

  I felt like making an omelet this morning.

  I started by toasting minced garlic in butter then added sliced mushrooms salt pepper and white wine sauteing until the wine cooked down to a nice coating for the mushrooms. Meanwhile the hot Italian sausage was cooking in another pan I diced a rainbow of bell peppers, green onion and chopped up some spinach.
  Next I seasoned 2 eggs wit parsley, rosemary, salt and fresh cracked black pepper mixed it all together and poured into a pre-heated non stick fry pan with a bit of Pam in the bottom. When the eggs set I layered in my mushrooms, spinach, and then the other ingredients which I mixed together first. Finally a generous layer of shredded Mexican cheese blend. Covered to let the cheese melt.
  It looked so thick I was sure I was going to have problems with the folding but it came out looking pretty good. Plated, I sprinkled it with more shredded cheese to  make it look photogenic and served.

  It tasted as good as it looked with all the flavors coming through deliciously.

Not sure if I could get threw 5 eggs but the rest sounds pretty amazing :)

Tho I have no idea what cilantro is?

Nope. All for me. Deborah turned me on to the ketogenic diet and it works for me. High fat, high protein, very low carb. My ratios are 176g fat, 30g carbs, 168g protein @ 2373 calories a day and I've lost 46lbs   over a 12 week period. I have a lot more to lose, but so far I'm losing it.

Cilantro is also known as Chinese parsley or coriander.

Yeah I saw that thread and you discussing it with Deborah. I'm not to sure it would be okay for a diabetic or someone with a pancreas problem.(mine has about half missing something about ebay....)

The high protein would be good and cutting any amount of carbs is generally a good thing. Carbs = Sugar after all.

Tho not all of us are good at sticking to low carb diets. If in doubt just inject more rapid is my solution generally.

Also thanks for clearing up the coriander confusion, I had never heard it called that before.

I found out about Cilantro  when Davina gave me a recipe that called for coriander leaves. I was aware of coriander but couldn't find coriander leaves anywhere so I googled them and found out here in the USA it is cilantro and of course can be found anywhere as it is a main ingredient in Mexican meals and is used plentifully in fresh salsa.

For whatever reason, I tolerate it well. It's not that I don't like things like bread, pizza, and other carbs, but it packs on pounds like I'm going into hibernation.

Morning Folks,

   This morning I made a veggie frittata. First I toasted minced garlic then added diced mushrooms and white wine and sauteed them until butter and wine reduced to a sauce consistency, and set aside to cool.. I dice up rainbow bell peppers, green onion, onion, spinach. and shredded cheese. then mixed in a cup with 2 eggs seasoned with salt, pepper, thyme, rosemary, and sage. This I poured into a small fry pan m covered and cooked on med-low heat until the top was done. Plated and topped with more shredded jack/cheddar cheese blend.
Again enough for two but only myself to eat it :-(

AARRRGGH!

Laurie, if this food porn doesn't stop I may have to block you! I'm drooling all over my keyboard.

My breakfast: coffee and a cup of yogurt with something mixed in (addicted to Chobani "Flip" cups), followed in an hour by an apple.

Yeah, my own fault. I used to make myself "breakfast burritos:" scrambled eggs with Italian seasoning, melted cheese, and two strip of turkey bacon folded into a soft flour tortilla - with ketchup of course. I miss that, but I am just not a morning person and have no ambition until lunchtime. Besides, 8 months ago I was pushing 170 lbs (that's a lot for me at 5'5") and I'm almost to 140 now and want to stay there.

But ohmigosh, those pictures! 🤤

LOL Stephanie,

  Food porn?? It's not porn it's just my breakfasts, You breakfast burrito was sounding okay up until you mentioned the imitation bacon and then you killed it with the ketchup. Ketchup is acceptable for fries, meatloaf, and inferior or poorly prepared meats. It doesn't belong on normal food.

Did I say ketchup? I meant "an herbed, savory sweet tomato relish." Ketchup? Who would ingest that? Ptui! I fart in its general direction.
