My boyfriend loves tuna and eats it all the time. I make all kinds of tuna dishes. The one tuna dish he didn't like was tuna salad. He said it was always to wet and mushy. So I came up with the following tuna salad recipe .
First of all I only use white albacore. It has a better taste than the cheap tuna.
4 cans of albacore tuna.
3 hard boiled eggs chopped.
Half of a small yellow onion diced.
A quarter of a small red onion diced.
1 dill ppickle diced and blotted with paper towels.
2-3 small sweet pickles diced and blotted with paper towels.
Half a stalk of celery diced.
I tbs of yellow mustard.
1tbs of spicy brown mustard.
Mayo to taste.
Drain 3 of cans of tuna. Blot it with paper towels then place it in a large bowl and flake it with a fork. Reserve one can of tuna.Add all the other ingredients except the mayonnaise to the tuna. Open the can of reserved tuna and drain it but don't blot it. It needs to be a little wet. Put it in the food processor with a tablespoon of mayonnaise and puree it. You want to make tuna paste. Add more mayo if needed to get it smooth. Stir the tuna puree into the other ingredients and add mayonnaise to taste.
This tuna salad is really good and it isn't wet like most tuna salad. Blotting the tuna and diced pickles has a lot to do with it. I use pickles instead of sweet relish because sweet relish is very wet and soupy. It's also too sweet for my taste. Dice everything with your knife. Trying to use the food processor for the pickles, celery and onions will make them soupy.

NOTE: this is how I make boiled eggs that always peel easy. Lucas loves boiled eggs but has a temper tantrum when he can't peel them easily.
Cover your eggs with cold water and add 1/2 cup of vinegar to the water. Yes vinegar.Bring it to a good boil then take them off the burner and put a lid on the pot. Leave them until they are lukewarm then pour out the water and cover them with ice water. Let them sit a few minutes. When you peel them crack both ends first. Even fresh eggs peel easily. I read that adding a tbs of vinegar to the water helped eggs peel easily. That didnt work. Half a cup does work.
