ok so I've been a little overwhelmed with donuts lately, this is my last batch for a few weeks lol. I'm leaving off on a great menu though!!
Church on Sundae- vanilla cream filled donut with chocolate ganache, sprinkles or peanuts, cherry, and a "communion" Nilla wafer


Pineapple Upside Down Cake Donut- cake donut with brown sugar glaze, caramelized pineapple, and a cherry on top. I tried to shape these ones so the hole was narrow enough for a cherry to sit on it and it worked, yay!

Almond- cake donuts with almond flavored glaze and crushed almonds on top

Lemon tea- yeast donuts with a lemonade glaze with a little iced tea snuck in

So I did yeast dough and cake dough this time, the cake dough was still the same issue as last time, it was too tough and dense, I need to find a way to use a batter instead of a dough for the cake donuts, I think that will help. I like the way the yeast donuts came out this time, they weren't as rich and it worked out better, but I had issues getting the dough to rise. last time the dough rose in the fridge overnight, this time it didn't rise while in the fridge, I had to leave it out for an hour this morning and then let the dough rise again after I cut it into donuts. I used a smaller cutter for the donuts with the holes in them and I think for yeast donuts the bigger cutter works better. as for the flavors, the Sundae one came out great! the filling seemed like more of a frosting than a cream though, I'll try a different recipe for that next time, but I nailed the ganache. the almond glaze came out very good and the lemon tea one tasted good when I made it but as it got absorbed into the donut it seemed to lose a lot of flavor. it was very lemony, which I liked, but the tea got lost, I need a way to amp up that part of the flavor. the pineapple ones were good but I think they could be better, but I don't know how to improve them just yet, I'll think of something though!
