I used to bake cookies and cakes *a lot*, but I've not done much in recent years.  Turns out it wasn't so great for my waistline or my (thankfully mild) wheat allergy.

Some of my old favorites in case it gives anyone any ideas:
Various pumpkin cakes, usually with topped with nuts or spices and sugar as I don't care for the typical frostings used for them.

Pineapple cake with chocolate glaze (be warned that pineapple and chocolate is a controversial combo - I happen to love it!)

Orange and olive oil cake drizzled with chocolate syrup.

Strawberry cake soaked with lime and Thai basil syrup.

Some of the more interesting layer cake combinations that worked well for me:

gingerbread, orange, hazelnut with spiced honey between the layers and cinnamon frosting

pistachio, saffron, cardamom with rose frosting and more chopped pistachios

passion fruit, chocolate, coffee (carefully chosen beans to work with both chocolate and passion fruit), with vanilla buttercream and a little extra passion fruit syrup

matcha, kinako, black sesame with lemon-yuzu frosting

Glad to hear it!  I really did love baking things and coming up with new recipes, and I've had quite a few people over the years tell me I should have been a pastry chef :)

I've been thinking about getting back into my old hobbies now that I'm not permanently depressed anymore (yay HRT!), so once I'm a little less busy with transition stuff and have my diet and health under better control, I might try some baking again.  I'll be sure to post pics and recipes if I do!

I made beetroot brownies last night. First time I've tried these, they came out great, lovely and moist but quite light too. [emoji39]

Dear Davina:  Thank you for starting this thread.   I do quite a bit of baking of not only cakes and cookies but also I bake various pastries as well.
I was not quite sure where to post this but after looking around I decided that your thread is the correct place.
       
This week I baked some Cream Puffs and once they cooled down after taking them from the oven, I filled them with Pastry Cream.    I will be bringing them to my Book Club meeting.... there are only about 6 to 9 attendees that will be there on any given meeting, so I have plenty extras to share with all of my friends and suitors.... and also for my clients that come to my office (I consider it to be Client Relations)....   ;)

Again Davina, thank you for starting this thread.... I love to see what others bake....    :)
