Sephirah

Four ounces of finest Irish prime beef, cut into a homestyle burger, with mature cheddar cheese and sweet chilli integrated into it, cooked very rare, with crisp iceberg lettuce, tomato, gently fried sliced peppers and onions, topped with a swirl of mayo and jalopeño relish...  served in a warm, toasted, cheese baked bun.

Heavenly.

That sounds good.  I took some leftover pork shoulder carnitas that I used to make burritos, and put it on a hamburger bun, with bbq sauce, like a pulled pork sandwich.

I'm afraid my sensibilities are far too delicate to disclose exactly which euphemism.  :-X

Nevertheless, the real thing looks like it may be tasty. Although I'm not really the world's biggest fan of barbecue - I prefer my cooked flesh to be, shall we say, on the bloody side (in a "Hot pan, meet steak; steak, meet hot pan. Good, now you two are acquainted, onto the plate with you. And stop mooing!" type way).

I think that in the American South, where slow-cooked meats are very popular, there are underlying health reasons.

True, slow cooking brings out the flavor, and makes tougher, less expensive cuts more palatable.  But the custom dates back before the advent of refrigeration, so I think it helped kill off parasites (like Trichinella).
