I went to a fundraiser earlier this evening fro my cardio-rehab program. They served a green salad and a fruit salad, mixed vegetables (including cauliflower, broccoli, and carrots), roast herbed red potatoes, chicken marsala or tri-tip roast beef.
I sampled a little bit of everything. :)

I cooked fettucce (like fettuccinni but wider) + homemade tomato sauce with onions, garlic, shrimp, bacon and topped with parsley.
Yummy!
Fire-grilled Pacific sand dabs, sauteed spinach, and cilantro corn salad.
Tortellini torta di, (tortallini pie/cake) kinda like a lasagna but a bit different :)
Baked potato with butter, sour cream, bacon bits, and fresh ground black pepper.
Red leaf lettuce, mixed greens, steamed garlic kale, whole avocado, 2 eggs, whole jalepeno satéed, large grab of cilantro, wild/brown rice medley, a heap of veganaise, salt & pepper, and a pile of chili pepper flakes. All chopped and tossed in a gigantic bowl. I like it SPICY! :icon_flamed:

A couple of tortillas, some cheese and a salsa fresca of your liking and some potato wedges and you've got a rather tasty and healthy dinner that costs you less than your average fast food slop 8)
Chicken enchiladas made with monterey jack cheese, red onions, diced jalapenos, in corn tortillas, and topped with a green tomatillo sauce.

@V M - you are right! Those frozen fish packets are great for making Baja fish tacos. One 4 oz package will make enough for two grilled fish tacos. I buy tilapia, flounder, and sole, when I can find them.

Have two chickens in the countertop roaster with lots of broth and rice in the rice cooker, we'll have chicken and rice with gravy tonight, a few days of chicken sandwiches later on and then chicken enchiladas in the days to come.

The sauce, yes. More time for the flavors to blend. And the re-heating can intensify the caramelization or Maillard reaction.
Along the same if-you-wait-it-will-come thinking, I made a marinaded four-bean salad on Friday, and got it out for dinner tonight.
Can of red kidney beans
Can of cut green beans
Can of garbanzo bean
Can of yellow wax beans
(all drained and rinsed)
Add to that some diced red bell pepper and thin-sliced red onion. (I threw in some diced jalapeno, but I'm a little nuts)
Dress with a vinaigrette made of red wine vinegar and sugar (or sugar substitute, like Splenda), and a little bit of grapeseed oil. Sprinkle in some celery seed. S&P tt. Let it sit in your fridge at least overnight.
I should put this in vegetarian cooking!
Tonight I made a main course salad for dinner.
On a bed of mixed salad greens, comprised of butter lettuce, radicchio, endive, escarole, arugula, and baby spinach, I added some sliced and segmented Cara Cara naval orange segments, thinly sliced red onion, ripe avocado slices, and sliced fresh strawberries. I made a cilantro, lime juice and orange honey vinaigrette to go with it.
On the side I had some sliced broiled skinless chicken breasts, which had been marinated in a citrus juice and honey marinade.
This is a good example of California cuisine.

Well tonight I'm making Veal Scallopini.
Brian, my butcher saw me in his shop and shouted from one side of the shop to the other, tell Cindy the veal is fantastic! Oh ye am I ever in hiding!!
So!
Pan fry the veal quickly, remove and lower the heat and add mushrooms (been ridiculously expensive here recently $10 kg, managed to get some for $3.95 kg for some reason) loosely cut them, chunky style, when starting to brown add sour cream a splash of vegie stock to make creamy, allow to slowly thicken, season with pepper, add the veal back and a splash of sherry, increase the heat.
Serve over mash with a Houghton's White Burgundy 2009.
A buttery croissant.
I had lunch with my dearest of friends earlier today. She had a roasted vegetable Napoleon and I had seafood ravioli. We both had shrimp corn chowder to start the meal, and both ended it will cherry cheesecake.
The cherry blossoms were as beautiful as she was.

I had some flat rice noodles tossed with a little peanut satay sauce on the side.
You ask, how did that cut calories? Compare it to, say, my regular Panang red curry with pork, and you can see the differences.

I made a take on Chicken Florentine.
Started off by slicing two skinless, boneless chicken breasts, through the middle, horizontally. I applied some garlic salt and freshly ground black pepper. I melted a couple of pats of unsalted butter in a cast iron skillet, and browned the breasts on both sides, on medium-high heat. Then I put the breast in a small casserole, and popped it into an over at 250F, just to stay nice and warm.
In the cast iron skillet I added two more pats of unsalted butter, and sauteed 2 tablespoons of minced shallots (about half of a shallot) and then added two mince garlic cloves. After the garlic has become aromatic (about 45 second), I deglazed with a cup and a half of white wine (Clos du Bois, Pinot Grigio, 2010), scrapping the bottom of the pan to loosen the fond.
Let the wine reduce for a few minutes, then add a cup of cream or half & half, and reduce by half. Your sauce should not be runny, and should coat the back of a spoon.
As the sauce is reducing, heat another pan and melt 2 pats of unsalted butter. Medium-high heat will do. Saute another minced garlic clove for about 45 seconds, they add and quickly stir-fry about 6 ounces of fresh baby spinach (you can leave the stems on, if you wish). About one minute. Then take it off the heat.
Plate you two chicken breast halves and spoon some of the sauce over the top. On that place about half of the spinach. Repeat of the other plate. Serves two.
Not really too hard.

My middle daughter has Crohn's. So, this weekend is the Crohn's and Ulcerative Colitis charity walk in Santa Barbara. Last night we hosted many of our team's walkers to a barbecue. One was in from out of state, and another had driven down from the Bay Area.
We feted them in true southern California style, with a Santa Maria style barbecue. Appetizers were a warm queso dip and tortilla chips, and a couple types of grilled sausages (chicken an d apple, and andouille). We had grilled beef tri tip (which is a bottom sirloin roast), grilled chicken, homemade salsa cruda, pasta with tomato and feta cheese salad, western baked beans, garlic french bread, and fresh corn-on-the-cob.
We were making margaritas prior to dinner, then with the meal we served a nice California Shiraz.
Now, today, I get to walk that off! (Fortunately, since I was cooking, I was not really eating.)

Sounds good, even though I don't have colitis I'd most surly have one or more of the symptoms after eating all that spicy stuff. Love those andouille sausages though, gave a whole case of them to my eldest son as an odd birthday gift, he's the Grillmaster and Mr. Yard party personified.
To tell you the truth, I toned down the spiciness. The salsa cruda was made with three fresh diced beefsteak tomatoes, one diced sweet onion, 1 minced garlic clove, 2 tablespoons of lime juice, pinch of sea salt, and just a teaspoon of minced serrano pepper. Normally, I would put in two wholes serranos!
And the queso dip was just Velveta, melted, stewed tomatoes, and some mild peppers. Much like the Rotel recipe.
It was a fun time, and the charity walk waddle begins in 4 hours.

I just finished my bowl of Special K cereal, I'm still working on my glass of orange juice.
I love Special K cereal. I got a box of the Vanilla Almond the other day on sale for $2.50
Not so much eating, but tasting. I spent much of the night preparing "crudités" for my cardio-rehab group tomorrow. I was doing in to Wednesday, but the Friday session folks were feeling left out!
Crudités are vegetable appetizers. Sometimes served raw, but mine are briefly blanched in boiling water and then shocked in ice water. The fun part has been making the four sauces/dressings. Tonight I made a Southwest Buttermilk Ranch, an Aioli, some Tzatziki, and Green Goddess. These are all made with just a fraction of the fat and salt as the regular versions of the recipes. Where a standard version might have sour cream or mayonnaise, I used non-fat sour cream and/or low fat plain Greek yoghurt, and/or low calorie no cholesterol mayonnaise.
The point being, you don't have to "ruin" some heart healthy fresh vegetables with a bunch of fat and salt.
Pineapple chicken Greek style quesadilla (I used pineapple instead of cucumber)

Removed the skin and trimmed off all the fat from a dozen chicken thighs, sloshed them around in a bowl of sesame oil and dusted each with copious amounts of "Kicken Chicken" herbs and spice combo from Safeway and grilled them slowly keeping the heat in the 300-350 degree range until they were golden brown, covered each side with Sweet Baby Ray's BBQ sauce, that and a tossed salad with light dressing did the trick.

The ones I had are angus beef franks. Pretty good. I usually get some kind of beef ones, the chicken and pork ones seem to have dyes and stuff in them too often.

There's a meat market in the local grocery store that features angus all beef weiners, they plump up pretty good on the grill and get really fat when cooked in a pan of water.

I do my grilling on a George Forman grill that I fussed at Dad for getting years ago. I feel bad for it too, cause I've actually found it very handy for a lot of things since he passed away.

I had one of those, they work great for a few items, hamburgers especially!
Fish tacos again :) What can I say? They are fairly easy to make and I crave them on at least a weekly basis
I have a batch of brownies in the oven. This recipe looked good and they smell wonderful, I hope they work!
I made a batch of ajo blanco con uvas - an ice cold, pureed, garlic and almond soup. No one else would touch it, not even the dog.
It was delicious.

There was a wonderful hamburger stand in downtown Los Angeles, originally on Wilshire Blvd at Bixel, near Woodbury University. It was called Pete's Grandburger and it opened in 1949. The place was packed at lunchtime. After they lost their lease, they moved up to 6th Street, across from the Good Samaritan Hospital.
The Grandburger was a double decker cheeseburger. But my personal favorite was the Humdinger. It was a cheeseburger topped with a sliced hot dog. Two awesome, evil pleasures in one meal.
Mustard, mayonnaise, ketchup, lettuce, tomato, onion, and pickles. Oh, and chili! Mmm, mmm, good.

Hey, I have never heard about Okonomiyaki, but I googled it and pics look the same :). Quite an easy recipe - the trick is to figure out how much flour to add. Too much and it affects the taste, too little and they never get fried properly and as You try to turn them over, they just fall apart :(. They turned out really good, with an improvised salad from cucombers, garden radish, dills and chives. And couple of fried bacon slices from yesterday leftovers :).

Large bowl of Hamburger Helper Salsbury Steak, Creamed Corn, and 3 pieces of thick-sliced bacon. Take a nibble +/- of bacon, take a spoonful of HH SS, and the gentle blend of smokey bacon wafts in thru the nostrils as the salty goodness of the Salsbury Steak drenches one's tongue...Yum!
Washed down with a King-sized rum and coke.
All food left in the fridge is now fresh.
...Now if I just had a wench to satisfy other longings...

Sunday night, so I experimented
I made medallions of boneless, skinless chicken breast, on a nest of angel hair pasta tosseded in Alfredo sauce. In the side I had some stir-fried mixed vegetable which included, yellow, squash, zucchini, carrots, and garlic.
It was kind of hot today, so after dinner I went and got ice cream sundaes at Baskin & Robbins. Mine was a scoop of "chocolate chip" and a scoop of "world class chocolate" with warm caramel praline topping, whipped cream, nuts, and a cherry.
Okay, I admit it. I was bad! >:-)

Haven't had Chick-Fil-a since the whole debacle happened. I miss their waffle fries and lemonade but it's a morals thing with me. If they're anti gay I guarantee they're anti trans so I don't give them my money.
I'm eating a vanilla pudding cup and think I'll go make me some lemonade now.

My Favorite Top Ramen Secret recipe.
Spicy Tai Peanut Noodles (Dorm Style).
Cook one pack of top Ramen. Drain the water.
Take 2 TBS of peanut butter with 1/4 cup of hot tap water (mix until creamy)
Add more water if necessary.
Add 1/2 tsp of sesame seed oil (optional)
Add 1/2 tsp of soy sauce (Optional)
Add 1/4 cup of peanuts (one of those tubes from the gas station)
Add as much hot sriracha as you like.
Pour sauce over ramen noodels. Enjoy.

Everyone slept in this morning, so I did not make a Sunday brunch. So to make it up to them, I made breakfast for dinner.

Spent the day at the beach. Cold and overcast! >:(
I could have walked around buck naked all day and not gotten a burn.
So anyway, since I had a bad weekend, I thought I would try to make amends by throwing together a nice seafood dinner. Went over to one of my favorite fish markets - avoided the temptation to buy some oysters on the halfshell all for myself.
I picked up some Pacific Red Snapper filets, King Crab legs (cooked), and some Bay Shrimp. With the shrimp and crab, I added lemon juice, chopped celery, and sweet onion (hmmm, pickled might have been nice), to make an easy seafood cocktail. I took some mixed greens and tossed them in a homemade Louie dressing, and topped the salad with the seafood cocktail. Refrigerate. Part one finished.
Part two, instant mashed potatoes with some minced garlic. Keep it warm on the stove. Easy breezy.
Part three (happening simultaneously as Part two), quickly pan fry in just a bit of olive oil the snapper filets, which had been doused in lemon juice and herbs and a bit of garlic powder. Four minutes on a side over medium high heat.
Plate the meal and enjoy. I did. Not bad considering I had one foot in the grave yesterday.
4 sloppy joes and half a bag of tater tots. Hungry...

I really do try to adapt recipes to be more heart healthy. Fish is a great food, if you avoid breading and deep-frying it. That just adds carbs and calories.
The four snapper filets I cooked added up to just over 5 ounces each - a very modest serving size and easy on the beltline, especially if you avoid the tartar sauce!
And no butter in or on the potatoes. Little improvements build up over time.

Thin-sliced smoked turkey, gouda cheese, apple, cucumber, and apple jelly on cocktail pumpernickel
A classic English cucumber, chives, basil, and roasted red bell pepper, on white bread, with garlic hummus
One loser:
Crumbled gorganzola and sliced grapes, on cocktail pumpernickel toast with melted basil-herb whipped butter.

BTW, in the morning i had some peanut butter and jelly sandwiches for the first time. Dutch peanut butter is probably much less sweet than the american peanut butter, but hey, i like it when both tastes blend into something very tasty. Yesterday i had two peanut butter and nougat cream sandwiches. I don't always do that, but i used to eat peanut butter with chocolate sprinkles, nougat cream with sprinkles.......

I made an Alfredo sauce (which is super easy by the way - it's just butter, cream, parmesan cheese, and S&P), to which I added some fresh garlic and minced sun-dried tomatoes. You can make it in 5 minutes.
I bought some smoked chicken sausages with artichoke and garlic, and heated those up, sliced, in a pan.
Cooked some thin spaghetti (8 minutes). Spaghetti Alfredo with chicken sausage. 10 minutes, tops.

Roux is the backbone of many Cajun dishes. As I recall, Prudhomme uses 5 or 6 types of roux.

Got that, and I used the term high fructose in my original post referring to HFCS. I do enjoy an apple and a banana every morning with it's natural sugars, but make a point of reading a lot of labels while at the grocery store to limit the HFCS intake in an effort to keep my overall sugar intake to a dull roar. We bought the halloween candies, I put them in a big bowl up on the top shelf so we aren't tempted to grab a few every day and wind up wearing the results.

Yes! I hear that :) Salad and protein is the core tenet of my weight loss program. Are you vegetarian or is the shake just an easier source of protein (I use meat... I'm eating less of it, but I won't stop). I also use a whole head of romaine lettuce ~ lunch and dinner... fills me up!

Mornings I have a small salad or fruit cup and a GNC Vita-Pac (energy/metabolism) At lunch a large salad and one fruit and at Dinner a medium salad and six ounces of lean beef or chicken breast. Protein shakes are at AM/Noon/Dinner. I don't get hungry and don't feel bloated. I feel great! Treated myself to a new black dress at last weigh in! :)

Congrats! I think I've said before, but I have cereal (Kashi GoLean) and a yogurt, then two salads. There are always exceptions... but I try to make them healthy ones! 204.0 this morning, from a 235 start!

LOL... People freaked out at my 20 lbs in 4 weeks... but it's easier when you're bigger.
Right now I'm just under 4 lb / wk (including that first 20). It can be done... it's even easier if you do the math on a restaurant bill.
Once you get a pattern and discipline going it is relatively easy to lose weight. Don't forget to have a once a week "cheat night" just don't make it to heavy.

I have cheat items every other day or so, as long as they're in my daily calorie limit (ice cream sandwich last night, mmm)... and one cheat meal a month (which will work well for the holidays) -- not one I go overboard on... but if there's birthday cake, I have birthday cake.

I get carrot cake on my birthday, my fave and the only type of cake I really like, though maybe I'm addicted to the frosting. One of the best and most moist carrot cakes I ever had was one with pineapple baked in the mix. Fat girls always say "To die for" when they're talking and emoting about foods, well this surely is!

Boring, bland nursing home food. I can't wait to go home.
I got all of the ingredients to make a nice vegetable soup - the weather here is beginning to cool off.
But, as I lay awake at nearly 4:00 AM, my time, I have this wild idea of adding some lentils and Indian spices, and doing a vegetarian vegetable stew instead.
My breakfast takes hours....

Then I shower and make coffee - today I made an extra iced coffee (going to have to cut back soon...when I go on spiro... so I'm getting my coffee drinking in now ;))
Start work 6:30-7, then at work I have a chobani around 9 am (I count it as snack, but it still feels like breakfast).

I'm down 35 lb and have 20 to go, eating 1600 cal a day (give or take). Salads are my friend -- until I start spiro. Then I have to switch to low-K lettuce AND eat less lettuce. Time for that stomach to shrink a bit more ;) I'm starting now (half a head of Romaine instead of a full head - still has 770 mg Potassium).
... and my dinner was super low calorie (way too far under my target for the day) so I had an Ice Cream Sandwich (the big 200 calorie Friendly's ones, not the Hood mini 100's) and a Sons of Liberty (Summer Seasonal) Hopped American Whiskey. They distill an IPA and it's wonderful - not bitter, just floral and lovely. It's easily my favorite whiskey and I need to find one last bottle before it's totally gone from shelves. Also... can't drink (much) on Spiro - but at ~$40/bottle that's OK.

Hm, Wokkels. Ate so many during my time in the Netherlands, never got tired of them and finally they have them at our local grocery shop.
Back from my trip and I really did not feel like going to the store. So I used what I had on hand to make a nice seafood chowder (or as my Massachusetts cousins would call it, "chowdah").
Start by rendering three strips of bacon over medium high heat until crisp; remove and drain.
In the slow cooker, on low heat, add three cups of milk and one 8-oz bottle of clam juice.
In the bacon fat, successively brown and add to slow cooker three potatoes (I scrub them, but leave on the skins), coarse diced; three peeled carrots, chunky sliced; three stalks of celery, with tops, chunky sliced.
Dice and sweat one medium onion, and two cloves of garlic, minced. Add to slow cooker. Allow to cook for 3 to 4 hours. Do not allow to boil.
In the final hour of cooking add one 6 to 8 ounce can of clams, with packing juices; one 6 to 8 ounce can of bay shrimp, with packing juices, and about 4 to 8 ounces of a white fish of your choice (I used 6 oz of sole). Season with a dash of sea salt, fresh ground black pepper to taste, a few dashes of cayenne, and a shake or two of nutmeg. When ladling into the soup bowl, garnish with crumble bacon.
That's it!! I served mine tonight with some warm buttered sourdough bread. Not much work, but a lot of warm, comfy goodness.
Veal chops with morel cream sauce with baby carrots and celeriac puree.
White sauce is one of the four "mother sauces" in classical French cooking.
To make an easy, and quick white sauce, melt two tablespoons of butter in a sauce pan over medium heat, add two tablespoons of AP flour and stir until mix, then whisk in a cup of half and half. Some people use milk; others use cream. Whatever.
From your basic mother sauce, the world awaits your creativity. Last night I added some Parmesan and Romano cheeses, garlic, and a can of clams (with the packing juices) to use over fettucini and rockfish.
It is so easy!
The French term is Béchamel. It is basically thickening milk with a white roux.
You can add/melt cheeses of various sorts; for in stance a cheddar cheese sauce, Morney, or Alfredo. Even a Welch Rabbit!
Mustard sauce is versatile. Herbs work good too. I like to add a little bit of sauteed onion.
Virginia's world famous kitchen sink pasta salad
The directions are fairly simple:
Cook pasta per 'al dente' instructions, drain, place in a large bowl, add a little olive oil, cover and put in the fridge to cool
Meantime, look in your cupboard then look in your fridge and ask yourself two easy questions
a) What do I like?
b) What do I have?
Add it all in the large bowl then add your favorite spices and dressing and mix it all together
Toast a couple slices of bread to go with it

Well, both are correct to use, but "Rabbit" is older. The earliest culinary use dates back to 1725, and its use for a cheese dish dates to 1747:

Creamy Rarebit
Omit the butter and the ale. Instead melt the cheese with 3/4 cup cream.
Since we have recipes for Welsh Rabbit and Belgian Squirrel, let me add another from Fannie Farmer:
English Monkey
A simple luncheon or supper dish. Also delicious as a hot cocktail dip.
Mix in a double boiler
1 cup crumbled bread (not too fresh)
1 cup milk
1 cup sharp or mild cheese, cut small
Cook until the cheese is melted, stirring occasionally. (It can be left several hours or 1/2 an hour, which ever is convenient.)
Season to taste with
Salt, pepper, and prepared mustard
Pour over crackers, toasted and spread with butter.
[My note: Many versions of this Welsh Rabbit without the beer, include a beaten egg and a pat of butter.]
Now, here is a Béchamel-based Welsh Rabbit (Rarebit), as per my post up the page
2 tablespoons unsalted butter
2 tablespoon all-purpose flour
1/2 cup cream
In a sauce pan over medium heat, melt the butter and then stir in the flour until you have formed a roux, about 2 minutes. Add cream and continue to stir [This is your Béchamel]. Add
1 teaspoon prepared Dijon mustard
2 teaspoons Worcestershire sauce (may use vegetarian alternative)
Salt and pepper, to taste
Cayenne powder, to taste
1/2 cup room temperature stout or porter all [Save the rest for the Chef!]
When back to heat, but not boiling, add while stirring
1 1/2 cups grated sharp Cheddar cheese and mix until melted and smooth
It's very weird that the perversion of the spelling "rarebit" caught on more than the correct spelling. I wonder if it was a pronunciation based change?
Small meals.
Like a bowl of quaker old fashioned oat meal in the morning with a large mug of coffee. Or sometimes a small bowl of cereal with milk. With vitamins.
Lunch, maybe a turkey sandwich with a slice of cheddar. Or a small piece of salmon fried in olive oil. Or maybe a salad with salmon and Ken's sesame lite dressing. Tasty!
Dinner
Ummm. Often a sliced organic apple with sliced cheese. (Finger food)
And then a couple of days per week I just eat anything scrumptious. Like pizza, or
Thai take out. The occasional restaurant meal, like a huge salad with tomato bisque soup. So basically I eat tiny meals and then pig out now and then. cliche: I am trying to watch my figure.
The rarebit rabbit debate. Meat was scarce and to makeup for it, cheese was used and these melted cheese and toast dishes were called rabbit but since rabbits were rare....I think you can see how the name came to be.
Rare because the Lords were only allowed to eat them, peasants had to make do.

Yesterday was particularly high... I was at 1800 calories until I ate the full sized chocolate bar my daughter gave me from her stash (Hershey's w/ Almonds - which is why I was gifted it). The kids are VERY posessive of their candy this year (the 8 and 4 especially), so it was actually sweet of her to give it to me freely.

The best exercise any of us can do is to think first, "Do I want to look good in my clothes in 2014 or do I want to wear this and be miserable? :icon_peace:

A number of years ago I tried to lose weight... and I did the best I ever had until now (back then I hadn't fixed the problem).
The first week, I ate as I normally did... including a weekly lunch out with work people at Chili's and a few trips to fast food. The only difference was that I recorded all of those meals. It was entirely disgusting... which got me to lose 25 lbs (that I ended up putting back on by doing all those same things again).
Since Aug 5 (my rebirthday) my diet has changed drastically... I've lost 40 lbs... and I will be keeping it off. Recording my food is the most important thing. Yesterday I hit 2081 calories (1800+ of them were on purpose - and I had that first chocolate bar of the diet last night), but I've been usually between 1400 (uncommon, a low day) and 1700 (though 1800 at the start of all this). My limit is currently set to 1600. I haven't been hungry in the least until this week... I try to eat bulky foods (lots of lettuce) and enough protein (mostly chicken)... plus low salt.
The only thing that has really changed this week is the time change and finally reaching <195 lbs. I think eating an hour later is really affecting my hunger... but I also think I need to plateau and maintain for a few weeks to let my body reset... then onward to <180 (BMI "normal" at 5'11"). I'm also trying (somewhat unsuccessfully) to work in more fitness. I need it, it's cold outside and in the basement, and I don't really want to do it. Working through that block will be difficult for me.
You're doing great, I'm proud of you and have been watching your progress. I got dinner down to salad plate portions, we eat at 4PM and I'll have a apple later in the evening. I have pegged my caloric intake around 1300 per day which is fine for me because I'm only 5' 7" tall and retired, and though I do a little workout every mid-morning I don't expend a lot of energy anymore.

For my cardio rehab session on Friday, I have made a potato-corn chowder with smokie sausages. Doesn't sound so healthy at first glance, but by using 2% milk instead of cream; low sodium chicken broth; grapeseed oil instead of butter; turkey sausage instead of pork or beef sausage; and 2% cheese instead of full-fat cheese; I can cut fat, cholesterol, salt, and calories ... and still have a hearty soup.
Instead of trying to bump up the taste with salt, I am using a salt substitute and chipotle Tabasco sauce.

Well it's just the food networks recipe for fried Mac and cheese balls. Except I used Colby-jack instead of cheddar and Gouda. And I like to use a spicy tomato bisque instead of marinara sause for dipping.
Warm apple pie
Simple meal. Steamed vegetables. Quartered red potatoes, sliced carrots, zucchini, and yellow crookneck squash, along with some portobellini mushrooms. Drizzled with a little garlic butter. No added salt.

I did seafood tonight too.
I marinated a couple of swordfish steaks in orange juice, pineapple juice, olive oil, and cayenne.
Then I made a salsa from tomato, onion, red bell pepper, jalapeno, pineapple, lime, lime juice, and a bit of sea salt.

I sauteed some fresh Pacific Oysters a little olive oil, tequila, orange zest, and lime juice, with some spices - I call it margarita oysters.
Broiled the swordfish 5 minutes to a side, basting when turned.
Plated the swordfish and topped with salsa. Served with the oysters, cocktail sauce, and a herbed rice pilaf. Sauvignon blanc.
The most collegeish thing to eat while studying after midnight.
Maruchan Ramen.

What do you use instead of the seasoning packets? (Probably a load of chemicals anyway)
Throw some chopped carrot, diced celery, and green onion in with the water as it heats to a boil, before adding the ramen. Those seasoning packets are full of salt.

Close to what I do. Though I have often eaten them plain. I don't buy salt, not to cook or eat with. I don't buy salty foods, and never seasonings containing salt. It is amazing the amount of salt used in restaurants so I very rarely eat in them. The food tastes often like it is made of pure salt. Salt dulls the taste of food so horrendously.
I will add a touch of olive oil, grated hard cheeses, green onion, roasted garlic, and sometimes after cooking, add diced tomato and peppers.

Oh that sounds good, I'll try it! I avoid salt as much as possible as it drives my BP up. A friend served me a toasted cheese and spam sandwich a few years ago, my fingers swelled up.

I get a lot of my inspiration from the Hispanic heritage of my part of California.
Fresh, local, ingredients are the hallmark of "California cuisine." As is the simple presentation. Much of coastal California has a Mediterranean type climate, so the ingredients often mimic those one might find in Spain, Italy, Greece, and northern Africa. Of course, with some New World touches. ;)
You find your way to southern California, and I will put together a feast for you.

Steamed vegetables sounds good. I'm very new to steaming things.
I'm steaming the last of some red bean buns. My daughter begged me for adzuki beans, so while we had them I figured we could try making sweet bean paste and the things people eat with it.
I'm also eating mango peach salsa on triscuits. It doesn't all go together but it's what's oldest and needs to get eaten.
I made some Christmas cookies for my wife's students - sort of like Tollhouse cookies, but made with the red, green, and brown holiday chocolate chips. :)
Then I got a little creative. I had some Reese's Peanut Butter Chips. On the package is a recipe for "Double Peanut Butter Paisley Brownies." That sounded good, but a bit on the plain side. So I added some almond extract with the vanilla extract, switched out about 1/2 cups of the peanut butter chips with Ghirardelli semi-sweet chocolate chips, and added a 1/2 cup of crushed slivered almonds.
In the morning I will cut them up into a bunch of little square brownies, dust them with powdered sugar, and take them in to my cardi rehab session. Not exactly healthy! But, wow, do they taste good. ;)

There are ways to make tamales right (old fashioned, time consuming) and ways to make them quickly. Say you want to do a salsa verde pollo tamale (chicken with green chili). You could cook up the chili and tomatillos and add the spices, or you can acquire a bottle of salsa verde!
Short cuts are okay. The key is finding a good corn flour (masa) dough recipe that you like.

Ramen can make a good meal! In your boiling water add a sliced carrot, a chopped stalk of celery, a sliced radish, and have a hard boiled egg ready to cut into it when you are done.
A egg is about 20 cents each. The carrot, celery and radish, just a few cents more. So, instead of a salty carbohydrate bomb, you have added protein, vitamins, minerals, and fiber.
If only I were so healthy.
I'm more likely to add marinated ground beef and kimchi.

I'm not so sure about the copper aspects, but the right pan, a proper fitting cover, and the right heat help give you a satisfactory result.
I am old school. I like 10" cast iron skillets that heat evenly oven any heat source - gas, electricity, wood.
Pre-heat your pan over medium heat, and melt butter in it. If the butter quickly bubbles and scorches, the pan is too hot. Whisk three room-temperature eggs with about 1/4th cup of milk. Add your seasoning, whisk again and pour in skillet. Allow the bottom of the omelette to firm up. Make sure you rotate the skillet to assure even cooking and distribution of the egg mixture.
When the bottom has firmed, but the top is still liquidy, add your other ingredients and cheese. I prefer my cheese shredded for easier melting. Cover the pan with a lid for two to three minutes, to allow the rest of the eggs in filling to cook and congeal.
Remove the lid. The omelette should have notably puffed up and the center cooked. If not, another minute covered.
Now, here is the only time the spatula touches the omelette (unless you are an expert at the flip). Get under one half of the omelette and fold it over on the other side. You should now be able to slide the completed omelette out of the pan onto the serving plate. (If it sticks a bit, gently loosen it with the spatula) Garnish with herbs and shredded cheese.
This takes practice. If the burner is too hot the bottom will brown too much and the insides will be runny. If the burner is too coll, it will take forever, be dry, and not puff up properly. The cover helps retain the heat of the pan while, in part, stream cooking the exposed interior.
Practice is right! I used to marvel at a cook that did omelettes at Sunday brunches using a 10" non-stick pan with sloped sides, he did the flip and they were perfect every time.

I recently tried the sun dried tomato and basil wheat thins. They would go great with Italian food. Put a little hunk of smoke provolone on them and garnish with half cherry tomato and chives - broil fo a minute.
No longer a snack ... you have a canapé! Treat yourself. ;)

I've tried those too, not bad. As for the provone and half cherry tomato, don't have the former and can't eat the latter. Tomatoes make me gag in their raw or close to raw forms. Its the texture and something else that changes once they are cooked.
Your reference to provolone has me craving a hot veal from San Francesco's in Toronto Little Italy.

A very nice burger with mozzarella, bacon, and pickles. It's a most excellent combo. I'd pair it with Newcastle Brown, if that was avalible to me.
My two cents...
1. I avoid sugar, grain (any and all grains), GMO foods or anything wrapped in a package.
2. Raw egg yolks from farm chickens (three eggs at different times of the day) and fresh steak daily for protein and B-12.

13. Vitamin D3 during winter. Sun yourself during the summer in the twelve o'clock sun for 20 minutes.
14. Look at the sun as it rises.
15. Be thankful for what you have even if it's almost nothing (many people have less).
Your cravings are a function of snacking on poisonous foods. Don't do that. I will get everyone into a Skype conference call and break all this down if I have to.

6 May I ask why is soy so bad ? I know they say it is good for cardiovascular health .
7 I looked yesterday for some Fluoride-free toothpaste at a huge supermarket , and I couldn't find a single one . I am pretty obsessive with avoiding fluoride exposure , at least when I can , like in toothpaste or (mineral) water .
What I noticed Is that only the cheap , low-branded toothpaste products may be fluoride free , as it would be bad not having that stuff in them .
I know that in the US at least they put some fluoride in the water , and they say it is good because there is a lower tooth decay rate.
Also in Romania , I remember that a few years ago , it was some tv show where it was presented a fluoride product in the shape of pills , and they recommended to administer that to children every day since like 2-3 years old .
How about the studies that shows a decrease in children iq correlated with exposure to fluoride ?
I tried to avoid mercury , (like in energy saving - mercury vapor light bulbs ) , and fluoride because of their neural damage properties , but I got a little obsessed so I feel more crazy than if I was exposed constantly to them :D , 'mad like a hat maker'

I had some hambuger I needed to use. Got creative with onion, pablano chili, canned diced tomatoes, and a sloppy joe seasoning packet. Don't know what it should be called, but it was good in a bowl with some saltine crackers.

Breakfast soup with toast 8) Fairly simple to make -
In a small pan, heat a can of soup of your liking (I tend to go for Progresso Italian style wedding soup)

Top toast as desired (I tend to spread a bit of butter and sprinkle with Parmesan)

Well, it would be more correct to say that the sauce came from a packet and the sausage is actually made by an American company that makes a variety of different sausages and yes, I got everything at a discounted sale
But dang, I can make it sound pretty fancy ;D And it actually came out pretty good

One time I went to a wine tasting party loaded with "wine experts" (self proclaimed that is) and thought hmm I'm going to bring a mystery bottle. I took the label off of raspberry Reunite and put a question mark on it and everyone LOVED IT! It ended up as the runner up. Everyone was shocked when they saw what it was. Lol
As for tonight's dinner? ->-bleeped-<-e yogurt with Splenda and a dash of vanilla extract, sugar free popcicles and some mixed veggies. Can't be fab every night :)

The Atkins low carb is the only smart diet!!! All those carbs just add on more stored fat. With A you eat good foods only, not junk like bread, corn, potatoes, all that cheap stuff loaded with bad carbs. There are lots of support sites, so many women have lots tons of fat. I'm down like 25 since I started & fell great. TRY IT>

The Atkins way of eating really works!!!!! Good foods, just no or low carbs like bread, corn, potatoes. All those carbs just add extra fat on your body....Thousands world wide follow the Atkins WOE to have a better body & life. Corn & stuff like that or made from it is for pigs to fatten them up......potatoes are full of the same stuff, carbs...Yuck.
I've been making this for the past few weeks once a week or so. It's so so so good.

This is a normally safe recipe because there should be enough heat in the rice to cook the egg. Some pasta recipes make a sauce with uncooked eggs and rely on the heat left in the pasta to cook the eggs at a safe temperature.

A grilled "cheese" sandwich consisting of two pieces of 12 whole grain thin-sliced bread (only 60 cals per slice), touched with olive oil, within which are dairy-free mozzarella style shreds with a dash or two of cayenne pepper, fresh ground pepper, a few hot jalapeño peppers and topped with more mozzarella style shreds and some mustard. Bread and contents grilled to the crunchy toasty zone of one's choice. Cheesy (but light), hot and good... now I'm trying to rationalize why it's okay to have another. :)

Easter leftovers a friend gave me, pretty good actually ;D
So this morning I went to a gourmet donut place, and I couldn't resist getting this sandwich. It was fried chicken breast on a glazed donut with lettuce and sriracha mayo. It was incredible! I got a side of mac n cheese with it that was pretty good too! This was eaten at like 9am lol. I felt disgusting after but it was so worth it
