I'm going to go with "genetics". The vegetarians I've met, regardless of how much they try to take care of themselves, have always appeared at least 10 years older than their given age. It was even worse if they were vegans [I knew a vegan who was so
disgusting and
sickly looking that I felt a little bad]. But these are just the ones I met. Genetics probably played a big part in how they looked, except for the vegan. I think he seriously had some deficiencies going on.
Anyway, diet, unless you're on a super junk food diet or a diet that consists of no nutrition, is probably going to make limited differences in your appearance and even then it would probably depend on predisposition to certain things. My mom, who's a meat eater albeit it's chicken and turkey for the most part, looks twenty years younger than she is and my dad looks about 10 years younger than he is. My sister also look likes she's 16 and she's 22. I'm nearly always pegged for being younger as well.

And we're all meat eaters to a degree.
