Ground beef 101 V 2.0

You remember how this works! We need 101 ways to serve hamburger.  Don't mess up the count.

1. Lasagna

INGREDIENTS
8 oz. ground beef
2 tbsp. finely chopped parsley
2 tbsp. finely chopped sun-dried tomatoes
¼ tsp. ground allspice
¾ tsp. dried mint
½ tsp. ground cumin
½ tsp. ground coriander
¼ tsp. ground cinnamon
½ medium yellow onion, grated, drained in a strainer
Kosher salt and freshly ground black pepper, to taste

INSTRUCTIONS
Build a hot charcoal fire in a grill. In a large bowl, stir together beef, parsley, tomatoes, allspice, mint, cumin, coriander, cinnamon, onions, salt, and pepper. Form 1 tbsp. beef mixture each around the end of 22 skewers; grill, turning, until lightly charred, about 4 minutes.

3. Turkish stuffed eggplants (karniyarik translates to "split belly")

1 lb eggplant, peeled in stripes lengthwise
1/2 lb ground meat
2 onions, cubed
1/2 bunch parsley, finely choppped
1 tomato, petite diced (for the stuffing)
1 tomato, sliced in half moons (for the top)
green banana peppers, as many as eggplants
ground pepper
salt
2 tbs olive oil
frying oil
1 cup hot water

-Peel eggplants leaving lengthwise stripes and then put them in salty water for 10 minutes. Dry them well and fry them as a whole in a deep pot with canola or corn or vegetable oil, whichever you're comfortable with. (Make sure oil is really hot before you place eggplants, otherwise eggplants will soak tons of oil)
-Once they're fried, first soak the excessive oil by resting them on a paper towel, and then place eggplants on an oven dish.
-In a deep frying pan, heat olive oil. Add onions and stir for 3-4 minutes.
-Add ground meat. Cook until ground meat soaks all the juice it lets out.
-Add diced tomato. Stir until cooked. Turn it off.
-Add chopped parsley, salt, and pepper. Mix well.
-With the help of two spoons, slit eggplants into two. But leave the tops and bottoms attached.
-Stuff eggplants with ground meat mixture.
-Place a slice of half moon shaped tomato and a green pepper on top of each split belly eggplant.
-Pour 1 cup of hot water on top and bake them in preheated oven at 400F until green peppers are nicely baked.

Serve with rice and yogurt.

Note: peel eggplants, but not completely, leave lengthwise strips on the eggplant

4. Steak Tartare

Ingredients

2 anchovy fillets
2 cloves of crushed garlic, peeled
1 teaspoon capers
1 egg
2 tablespoons Dijon mustard
Salt
Freshly ground black pepper
1/4 cup olive oil
1 pound freshly ground beef tenderloin
1/4 cup minced shallots
4 tablespoons chopped egg whites
4 tablespoons chopped egg yolks
4 tablespoons brunoise red onions
4 tablespoons finely chopped fresh parsley leaves
8 slices of white bread, crust removed, tossed in olive oil, seasoned with salt and pepper and toasted

Directions

In a small wooden mixing bowl, combine the anchovy, capers and garlic. Using the back of a fork, crush the two and form a paste. Add the egg and mustard. Whisk well. Season with salt, pepper and Worcestershire sauce. Whisk in the oil, to form an emulsion. In a cold mixing bowl, combine the tenderloin and shallots. Season with salt and pepper. Add the emulsion and mix well. Form the tartare into 4 ounce rounds, about 1-inch thick. Place in the center of four cold plates. Garnish each with traditional garnishes. Serve with toast points.

Dirty Rice

2 cups enriched rice
4 cups chicken stock
2 tablespoons vegetable oil
4 cloves minced garlic
1 1/2 cups diced white onion
1 pound ground beef

Place rice in pot and add chicken stock. Bring to a boil then cover and simmer for 20 minutes.
Saute garlic, onions and bell peppers in vegetable oil until soft for about 15 minutes.
Cook ground beef in saute pan and add to rice.

Ladies and gentlemen - If you are going to tease my taste buds with exotic ground beef dishes, please include a recipe.

Such as:

9. Keema Aloo

2 tablespoons extra-virgin olive oil
1 extra-large Spanish onion, chopped
2 tablespoons water (optional)
2 pounds lean ground beef
4 cloves garlic, minced
2 tablespoons grated fresh ginger root
1 serrano chile pepper, finely chopped
2 teaspoons chopped fresh cilantro
1 tablespoon ground coriander
1 1/2 teaspoons salt
1 1/2 teaspoons ground cumin
1 teaspoon ground cayenne pepper
1 teaspoon ground turmeric
1 (28 ounce) can diced tomatoes
3 potatoes, peeled and diced
1 cup frozen green peas
1 teaspoon garam masala


    Heat olive oil in a large saucepan over medium-high heat. Cook and stir onion in the hot oil until soft and beginning to brown, about 12 minutes. If browned bits of onion are stuck to the bottom of the pan, stir water into onion and stir to loosen the browned bits.
    Mix ground beef, garlic, ginger, serrano chile, and cilantro into pan; cook and stir until beef is browned and crumbly, 10 to 15 minutes. Reduce heat to medium-low. Stir coriander, salt, cumin, cayenne pepper, and turmeric into the beef; cook and stir until flavors blend, about 5 minutes. Add tomatoes and potatoes, cover pot, and simmer until potatoes are tender, about 15 minutes.
    Mix green peas into dish and cook until sauce has slightly thickened and flavors have blended, 10 to 15 minutes. Sprinkle garam masala over the dish, cover, and let stand for 5 minutes before serving.

I am very lucky, I have an Ethiopian restaurant about half and hour away from my house. It's really good! They have the best coffee too, they roast their own beans every morning.  :)

12.  Ground beef and potato burritos
Makes four large burritos

Ingredients

2 large potatoes, peeled and cubed
Spray oil (like Pam)
1 pound ground beef
2 garlic cloves, peeled and minced
1/2 large sweet onion, medium diced
2 tablespoons chili powder
2 tablespoons Tabasco chipotle sauce
1 cup shredded Mexican blend cheese, divided
1 cup salsa, divided
4 large flour tortillas
Guacamole (optional)
Sour cream (optional)

Method

Over medium high heat, cook the cubed potatoes in oil until browned, turning frequently
When browned, remove to a bowl

In the same pan, add the ground beef, when beginning to brown, add the garlic, onion, chili powder and hot sauce.
Continue to cook until the beef mixture is thoroughly cooked through.  Drain away the drippings.

Warm the tortillas, and set one on each plate, and spread the following amount on each:

Spoon 1/4th of the potato mixture
Spoon 1/4 of the meat mixture
Similarly divide the cheese and the salsa
Add guacamole and sour cream to taste

Fold the two opposite flaps over the burrito stuffing.  Then roll the burrito on the unfolded sides to enclose the meat and potatoes.  Serve warm!

Let's make that meatloaf a little more exotic, Blue Eyes.

Hamburger and Yorkshire Pudding

Yorkshire pudding

2 eggs, beaten
1 cup milk
1 cup flour
1/2 teaspoon salt

Meat balls

3/4 lb ground beef
3/4 teaspoon salt
pepper
1/2 teaspoon Dijon mustard
1 tablespoon onion, minced
1/2 tablespoon cornstarch
4 tablespoons ketchup or 4 tablespoons chili sauce
2 teaspoons Worcestershire sauce

Directions:

1 ----------YorkshirePudding----------
2 sift flour and salt together.
3 Beat eggs and milk together.
4 Gradually add liquid to the flour.
5 Beat for two minutes and refrigerate. Leave it in the fridge for at least an hour so it is ice cold when you pour it into baking dish

6 -------Meatballs-------------
7 Mix all the ingredients together and shape into walnut sized balls.
8 In a skillet brown the balls but so not cook through.
9 Putting it together: Heat oven to 400F degrees. Heat the cassorole dish & grease it
10 Pour half of the Yorkshire pudding into a 10"x6"x2" greased casserole dish.
11 Scatter the meat balls evenly in the batter.
12 Pour over the remaining batter.
13 Bake uncovered for about 25-30 minutes.
14 The pudding should be puffed up around the meatballs and golden tipped.
